Paula Deen’s Rich Chocolate Meringue Pie Recipe

Details

Prep Time: 10 minutes
Cook Time: 15-20 minutes
Bake Time: 10 minutes
Total Time: 35-40 minutes 
Serving: 8 (ish) slices or a 9-inch pie plate

Ingredients

1 9-inch pre-baked pie crust

Filling

1 cup sugar
3 Tbsp cocoa powder
4 Tbsp all-purpose flour
1/8 tsp salt
3 egg yolks
2 cups milk
1 Tbsp butter
1 tsp vanilla extract

Meringue

3 egg whites
1/4 tsp cream of tarter
4 Tbsp sugar
1 tsp vanilla extract (optional)

Preparation 

Step 1: Pie Crust

Prepare and pre-bake your pie crust. Set aside to allow it to fully cool. 

Step 2: For Filling

Start off making your chocolate filling by taking a medium-size saucepan, and placing it over low heat. In your saucepan combine sugar, cocoa powder, all-purpose flour, and salt. Stir until combined. 

Add and yolks, and milk. Whisk thoroughly until all ingredients are combined. Stir whisking continually, until your mixture begins to thicken. 

Once thick, remove from heat, and add butter and vanilla. Stir to combine. Cover with plastic wrap directly on the chocolate mixture, and set aside to cool.

Step 3: For Meringue

While your chocolate mixture is cooling, it’s time to make meringue. In a mixing bowl, add egg whites. Whisk on high speed until stiff peaks form. 

Add cream of tartar and continue whisking at high speed.  

Add sugar, and vanilla extract. Stir just to combine. 

Preheat oven to 350°F.

Spoon the meringue to cover the entire pie. With a rubber spatula, create peaks, then place into the oven and bake for 10-12 minutes, or until the meringue starts to turn a golden brown in color. 

Serve right away, or chill first then serve. 

Optional Toppings

If desired, you can decorate your pie a bit by topping it with chocolate shavings, or a drizzle of chocolate sauce before serving.

To make chocolate silk pie, begin by adding sugar and eggs to a saucepan. Whisk continually over medium heat until the mixture reaches 160°F, or begins to coat the back of a metal spoon. Remove the saucepan from the heat, and add chocolate chips, and vanilla. Set aside. In a mixing bowl, beat room temperature butter until it is creamy. Add heavy cream, and whisk on high. In a separate mixing bowl add heavy cream, and whisk until stiff peaks begin to form. Mix butter and cream mixture together. Next fold in the chocolate mixture. Paula Deen’s Sweet Potato Pie

To make a sweet potato pie, you will want to mix baked and peeled sweet potatoes, sugar, butter, eggs, vanilla, and spices such as cinnamon, ginger, and nutmeg.   1. Does the pie filling cool in the pan (w plastic wrap), or do does in go in the pie shell immediately after thickening and cools in it?

    • Hi Nancy,
      You can do it either way. If your pie shell isn’t cooled off completely, I’d let the filling cool off for a little bit in the bowl before adding it to the pie crust. But if your pie crust has cooled, it will work to pour the filling into the pie crust and let it cool there. Either way, you will want to transfer it to the cooled pie crust before the filling is completely set.
