Macaroni corn casserole is an easy and delicious meal that will satisfy the whole family. This casserole is perfect for a quick dinner, or even a Thanksgiving side dish! The kids and kids at heart will devour this dish with a smile. The best part is that it can be prepared by just dumping it and baking, super easy! 

Not only is it easy to prepare, but it also tastes wonderful. That’s right, I was surprised when I first tried this combination, but the flavors go very well together, and you end up with a finished casserole that tastes amazing. 

Easy Macaroni Corn Casserole Recipe

To make this macaroni and corn casserole, you will simply gather all your ingredients as well as a casserole pan. Then, all you must do is open your ingredients, and add them to the pan. 

Preheat your oven and stick your casserole dish in to bake. After half of your time is up, you will stir the casserole and then finish baking it. Super easy! 

Macaroni and Cheese Bake Ingredients

Canned corn, one not drained
Elbow macaroni
Butter
Milk 
Shredded cheddar cheese, or Velveeta 
Cornbread mix, prepared (optional)

How To Make Macaroni and Cheese Corn Casserole

To make this macaroni and cheese corn casserole, start off by preheating your oven to 350°F. Then take your casserole dish and spray it with cooking spray. Next, dump all your ingredients into a mixing bowl and stir to combine. Place in the oven and bake for 30 minutes. Remove and stir to combine. Optional, if desired, add prepared cornbread mix to the top of your casserole. Place back into the oven, and bake for an additional 30 minutes. Remove and serve while hot, enjoy! 

Mac Corn Casserole Method

If you are in a hurry and do not wish to wait one hour for the casserole to bake, another, faster method to use in baking your corn and macaroni casserole is to prepare your macaroni and cheese on the stovetop, then pour it into a prepared casserole dish. Top it with your cornbread mix, and bake for 15-20 minutes at 350°F. 

If you choose to use this second method, you may want to add a bit of milk to your mix to help keep the macaroni moist. You will end up with a delicious casserole if prepared using either method.

Ingredients

2 15 oz cans Corn, 1 not drained
1 ½ cup Elbow macaroni
½ cup Butter
1 cup Milk
2 cups Shredded cheddar cheese, or Velveeta 
1 Cornbread mix, prepared (optional)

Directions

Gather all your ingredients and preheat your oven before cooking. Cook, then stir, then cook some more. Or prepare your macaroni on the stovetop by boiling the noodles then mixing in your cheese, butter, and a little milk. Mix with corn before adding to your casserole dish and topping with prepared cornbread mix.

Step 1: Preheat Oven

Preheat your oven to 350°F. Spray casserole dish with cooking spray and set aside. 

Step 2: Mix

In a medium-sized mixing bowl, combine all your ingredients, and mix. Then pour the mixture into your prepared casserole dish. Smooth so that it is evenly distributed. 

Step 3: Bake

Place the casserole into the oven and bake for 30 minutes. Remove from the oven and stir. If desired, top with prepared cornbread mix, then bake for an additional 30 minutes. Remove and serve while hot. Enjoy! 

Notes

If you are a cheese lover, you may feel free to add a bit of additional cheese. Also, if you are afraid of it turning out dry, a bit of milk can also be added. However, this recipe, prepared as is, makes for a delicious and low-cost meal that everyone will enjoy! 

For the cheese, you can use shredded, Velveeta, or about 8 slices of individually wrapped cheese slices that melt easily along with shredded cheese. If you are unsure of the amounts, simply add your cheese and mix it in, until it looks like the amount of cheesiness you like to eat. 

Fresh Corn Casserole

If you have some fresh corn you are looking to use in making your corn and macaroni casserole, this is a definite option. To use fresh corn, simply add about one to one and a half cups of milk to your casserole as you bake it with uncooked pasta. Your cheese and butter content will remain the same. 

Sweet Corn Mac ‘n’ Cheese Recipe

To prepare this recipe with fresh sweet corn, cook your sweetcorn ahead of time. Then add your corn, along with ½ cup milk, and ½ cup water to your mixture. The rest of the recipe can be prepared as instructed above.

Miranda Lambert’s corn and macaroni casserole is the ultimate comfort food. It is so rich and creamy and is the perfect combination of savory with a hint of sweetness to it. Mixing macaroni and cheese with corn is not a combination I might have dreamed up, but when I tried it, it was so good! 

To top it off, my family also loved this casserole, which is great for me, because it is so easy to make! I chose to add a box mix of prepared Jiffy cornbread mix on top of our casserole as well, to help enhance the corn flavor. This tasted so good! 

One word of caution though is to not slack on the cheese or milk. These two ingredients help prevent the entire casserole from becoming dry. Otherwise, this dish is perfect for a fall, winter, or even summer day. Let’s be real, there is no bad time for macaroni and corn!

Corn and Velveeta Casserole

Corn and macaroni made with Velveeta has a rich and creamy texture to them. Often times, this is the way to go, if you are trying to avoid the gritty taste that can often use entirely shredded cheese. Another great way to mix it up, if you are not able to use a block of melty cheese, such as Velveeta, is to use the sliced melty cheese, mixed in with your shredded cheese. This will help to give you a lovely flavor, and a great texture.
