This recipe for our delicious Christmas coffee cake recipe, is the best coffee cake recipe ever! There are many kinds of coffee cakes out there, but this one is the best one I have ever tasted. Some coffee cakes are delicious, but they are too dry. Others are great but you try them and immediately get a buzz from the sugar overload. 

This coffee cake recipe is a great balance between a luscious dense, yet it is a moist cake, with a tasty cream cheese filling balanced out with cranberries, an oatmeal, pecan, and brown sugar topping, followed by a light drizzle of frosting. This makes it the perfect mixture of sweet, savory, and moist cake. When I gave my family their first taste test of this Christmas coffee cake recipe, they responded with raving reviews. How Do I Make Christmas Morning Coffee Cake

There are four main parts to this delicious Christmas coffee cake recipe. Those four sections are the cake batter, cream cheese filling, crumble topping and the frosting glaze on the top. Let’s start with instructions for the cake. 

How To: Bake The Cranberry Cake

Begin by making your cake batter in a large mixing bowl. Combine oil, melted butter, sugar, eggs, vanilla, cinnamon, sour cream, flour, oatmeal, baking soda, baking powder, and salt. Mix once all of your ingredients have been added until they are well combined. Set the bowl to the side. 

Now it is time to make your cream cheese filling. In another large mixing bowl, add your cream cheese and beat it until it is creamy. Add in your egg and sugar. Mix until they are combined. Then pour in your cranberries. Carefully fold them into your mixture. Do not overmix, or your filling will turn pink. Set the bowl of prepared cream cheese filling to the side. 

How To Make The Best Part Of Any Coffee Cake…The Crumb Topping!

The best part of any coffee cake is typically thought to be the crumb topping. This recipe does not disappoint with the delicious topping. Create it by following the instructions below. 

How To: Prepare The Spiced Crumb Topping

In a mixing bowl, add melted butter, packed brown sugar, cinnamon, vanilla, pecans and oatmeal. Stir the ingredients together until they are completely mixed in. Now, it is time to gently mix in your cranberries. Stir just until they are combined. 

How To: Assemble

Preheat your oven to 350°F.

Now, to assemble your delicious cake! I prefer to use a Bundt pan for this recipe, because I feel that it adds some extra elegance. However, if you prefer to make more of a traditional coffee cake, you can use a 9×13. No matter what pan you choose to use, be sure to grease it very well before adding your first layer. 

Bundt Pan Assembly: After your Bundt pan has been thoroughly sprayed with cooking spray, you can add your first layer. Because you are creating the cake upside down in a Bundt pan, start with your topping. Pour the entire contents for your crumb topping into the bottom of your Bundt pan. Pat the crumb topping down, so that it begins to stick together. 

Next, add half of your cake batter to the pan. Smooth it around so that it is an even layer. Now, pour in your cream cheese filling. Be sure to spread it around the entire pan so that it creates an even layer. Finally, pour your remaining half of the batter into the pan and smooth it out.

9×13 Cake Pan Assembly: If you are choosing to use a 9×13 to bake your Christmas coffee cake, you will still want to be sure to grease the bottom well. Then add half of your cake batter and spread it evenly out across the bottom. Next add your cream cheese filling and spread it out evenly. Cover your cream cheese, with the remaining cake batter. Sprinkle the top with your crumble topping and bake. 

How To: Bake The Cake

Place in the oven and bake for 45-60 minutes, or until a toothpick inserted into the center comes out clean. Also, look at your cake, if it appears jiggly in places, it should be baked longer. Remove from the oven and allow for it to cool for about 10 minutes, before flipping onto a clean serving plate. 

How To: Make The Glaze

After your cake has been baked, it is time to prepare the glaze for the top of your Christmas coffee cake. Mix 2/3 powdered sugar with 1 ½ Tbsp milk and ¾ tsp vanilla. Stir to combine. If it is super runny, then add more powdered sugar, if it is too thick to stir add a tiny bit more milk. Drizzle on top of your Christmas coffee cake after it has been flipped. Serve and enjoy! 

Baking Notes

Glaze Variations. If you would like to add a bit of a twist to your coffee cake, a good way to switch up the frosting is to substitute cranberry juice, Amarillo, lemon juice, or orange juice, for the milk. This will give you a hint of added flavor in the glaze. 

Recipe – Christmas Morning Coffee Cake

Ingredients

Cake:

¼ cup melted butter
1 cup sugar
¼ cup canola oil
2 large eggs
1 cup sour cream
2 tsp vanilla
1/3 cup quick oats
1 2/3 cup all-purpose flour
1 tsp cinnamon
1 tsp baking powder
½ tsp baking soda
½ tsp salt

Cream Cheese Filling:

8 oz cream cheese
1 egg
¼ cup sugar
1 cup cranberries

Crumb Topping:

¼ cup melted butter
¾ cup packed brown sugar
1 tsp vanilla
1 tsp cinnamon
1 ½ cup quick oats
¼ cup cranberries
¼ cup pecans 

Glaze: 

2/3 cup powdered sugar
1-2 Tbsp milk
1 tsp vanilla

Directions

Begin by gathering all the ingredients to be sure you have everything. Then it is time to begin baking! 

Instructions

Step 1: Preheat Oven

Preheat your oven to 350°F

Step 2: Cake Batter

In a mixing bowl, combine all your ingredients. Once all ingredients are in your mixing bowl, mix until no lumps remain. Set to the side. 

Step 3: Cream Cheese Filling

In another large mixing bowl, add cream cheese and beat until it becomes creamy. Once creamy, add egg and sugar. Mix to combine. Once mixed, add cranberries and gently fold to mix in. Fold just until combined. Set to the side. 

Step 4: Crumble Topping

In a fresh mixing bowl, add melted butter, brown sugar, vanilla, cinnamon, pecans, and quick oats. Mix until they are combined. Add in cranberries, and fold the mixture together, just until they are mixed in. 

Step 5: Assemble

Now that you have your cake batter, cream cheese filling and crumble topping created it is time to assemble your cake. Take your Bundt pan, and thoroughly spray it with cooking spray. First, add in your topping, and smooth it out so that it evenly covers the bottom of your pan. Pat it into place. Then pour half of your cake batter and spread it so that it evenly covers the topping. Next, pour in your cream cheese filling. Spread it out so that it evenly covers your cake batter. Cover the cream cheese with your remaining cake batter and be sure to smooth it out. 

Bake at 350°F for 45-60 minutes. Insert a toothpick to be sure it comes out clean before removing it from the oven. Also, jiggle your cake. If you see the cake wiggle at all, bake for a few more minutes then check it again. 

Remove your cake from the oven and allow it to cool for 10 minutes, before carefully flipping it onto a serving plate. Allow for it to sit for a few moments before removing the pan. 

Step 6: Glaze

Once your Christmas coffee cake has been flipped and is cooling off, it is time to create your glaze. In a small mixing bowl, combine powdered sugar, milk, and vanilla. Stir to combine. If too runny add more powdered sugar, if too solid, add a little more milk. Drizzle on top of the cake. Serve while warm or after it has cooled. Enjoy! 

Additional Baking Tips

Done. To tell if your cake is finished baking, try inserting a toothpick and see if it comes out clean or if there is cake batter that sticks to the toothpick. For this coffee cake, you will also need to give it the jiggle test. To do this, try carefully wiggling the cake pan. If you see the cake itself move at all, this means it needs to bake for a few more minutes. 

Flip and Remove Pan. Once your pan is finished baking, allow it to cool slightly for a few minutes before trying to flip the coffee cake. You will however want to flip the cake while it is still hot. If you do not flip it while it is still hot, your cake is likely to get stuck inside of your Bundt pan.

Storage. Because this delicious Christmas coffee cake recipe includes cream cheese, it will need to be kept in your refrigerator after it has cooled. Store in an airtight container or wrapped in plastic wrap for 3-5 days in the fridge.

Recipe Variations – Coffee Cake Recipes For Christmas Morning

There are many different variations that you can do for this recipe and have a whole different tasting coffee cake as a result. Below are a few ideas for you. 

Cinnamon Streusel Coffee Cake

Simply leave out the cream cheese filling and remove the cranberries. Substitute by adding a mixture of cinnamon, brown sugar, and granulated sugar mixture to the center and topping. 

Overnight Coffee Cake

Overnight coffee cake can easily be done with this recipe. Simply make it ahead of time and leave the baking until the next morning. 

Sour Cream Pumpkin Coffee Cake With Pecan Streusel

To create a sour cream pumpkin coffee cake with pecan streusel, simply leave out the cranberries, and cream cheese filling, and add a can of pumpkin pie filling to the cake batter. 

Caramel Apple Coffee Cake

Caramel apple coffee cake is a delicious fall treat. To adapt the above recipe, simply leave out the cream cheese and cranberries. Instead add a layer of apples, mixed with brown sugar, cinnamon, and flour. 

Cranberry Eggnog Crumb Coffee Cake

For this variation, simply prepare as above, only add in eggnog and enjoy the delicious result. 

Sour Cream Coffee Cake Recipe

To make a plain sour cream coffee cake, omit the cream cheese layer, and remove the cranberries from the topping. 

Apple Streusel Coffee Cake

Apple streusel coffee cake can be easily made by removing the cranberries from the entire recipe above and substituting them with chopped apples in both the cream cheese filling as well as in the topping. Also, try adding cinnamon or apple pie spice to the cream cheese filling for added flavor. 

Cranberry Crumb Coffee Cake

Prepare as above for a cranberry crumb coffee cake, only exclude the cream cheese filling, and instead add cranberries to the cake batter. Also, exclude cinnamon from the entire recipe. 

Easy Cinnamon Brown Sugar Coffee Cake

For this delicious variation, simply leave off the cream cheese filling, and exclude the cranberries and pecans from the crumble topping. 

Apple Spice Cinnamon Swirl Coffee Cake

To make an Apple Spice Cinnamon Swirl coffee cake, exclude the cream cheese filling portion, as well as excluding the cranberries from the recipe above. Create this variation by adding in apples to your cake batter. 

Bang’n Blueberry Coffee Cake

This blueberry variation is made simply by substituting blueberries everywhere that cranberries are called for. 

Cinnamon Coffee Cake Recipe

Cinnamon coffee cake can be easily made by removing the cranberries from the above recipe and adding a little bit of cinnamon to every layer. 

Eggnog Coffee Cake

To adapt the above recipe to make an eggnog coffee cake, simply leave out the cream cheese filling, and add a cup of eggnog to the cake batter along with three-fourths cup additional flour. 

Tannenbaum Coffee Cakes

Tannenbaum coffee cake, or a cake in the shape of a Christmas tree, can be made several different ways. The easiest ways would be to bake it in a tree shaped pan, or cut a tree shape out of a 9×13 size pan. 

Christmas Tree Coffee Cake

To make a Christmas tree coffee cake, the process would be the same as stated for a Tannenbaum coffee cake. 

Christmas Coffee Cake Ring

Prepare the cake as above, and be sure to bake it inside of a Bundt pan, or another ring-shaped pan. 

Tuscan Christmas Coffee Cake

To make a Tuscan Christmas coffee cake variation, complete the following substitutions. Almonds for pecans. Almond extract instead of vanilla. Add in an orange zest to the cake batter. Also, add white chocolate chips to the topping mixture. 

Christmas Morning Cranberry Orange Coffee Cake

Create the coffee cake as stated above, only add orange zest and orange extract to the cake batter for the added orange flavoring.
