To make Primavera Stuffed Chicken, you will need the following items. Feel free to substitute vegetables with others if there is something you would rather eat. 

Chicken. My favorite kind of chicken to use for this recipe is boneless, skinless, breast meat. However, if you prefer, chicken thighs can also be used, and turn out deliciously. How you want your chicken to be assembled, also depends on what type of meat you decide to use. I recommend using breast meat because you can simply cut slits into the meat and insert your vegetables. This allows your vegetables and your chicken to both cook consecutively and you will have a delicious meal, without your vegetables or chicken needing more time to cook. 

Vegetables. The best vegetables to use, are ones you can thinly slice. Zucchini, yellow squash, peppers, onions, tomatoes, and potatoes are a few ideas of good ones to use. Feel free to get creative with vegetables that you enjoy eating. 

Mozzarella. Using shredded mozzarella cheese on top of your dish makes for an amazing, finished taste. The cheese adds a depth of flavor and helps to pull the entire dish into a delicious combination of tastes.

Butter. Adding a drizzle of butter to your chicken before you cook it, allows for a delicious outcome. The butter prevents your chicken from getting dry and gives the flavors a boost as well. 

Garlic. When you add the butter drizzle to your assembled chicken, be sure to add a bit of minced garlic as well. The flavor of garlic does amazing things to chicken as it is cooked, and ultimately, makes it taste amazing. 

Seasonings. Some great seasonings to have on hand when preparing Primavera Stuffed Chicken would be garlic powder, Italian seasoning, Farm Dust seasoning, and Salt Sister’s blend. Farm Dust and Salt Sisters are both similar in that they are a combination of salt, garlic, pepper, and a few other spices. Any kind of garlic salt that you have on hand will work just as well. Feel free to also add your favorite seasonings to make this dish your own creation. 

Keto Primavera Stuffed Chicken

This recipe is great for anyone trying to stick to a keto diet. Although more ingredients may be added to the recipe if you desire, it is originally straightforward in containing only chicken, vegetables, and cheese to top it off, making this recipe low in carbs. 

Primavera Stuffed Chicken Breast

Using chicken breasts to make Primavera chicken, is traditional, and makes the recipe so much easier. When you use boneless, skinless, chicken breast pieces, you simply cut a slit in the top of your breast meat and insert your sliced vegetables before baking. Other methods, suggest that you use a meat hammer and flatten out your meat then roll your vegetables inside of the meat. Another option is to use chicken thighs. To do this, you would need to cut a slit into the thigh meat and insert your vegetables. Although these all work, the best way to get your vegetables and meat to cook evenly is to cut slits into your meat and bake your dish open-faced. Below you will find step-by-step instructions, on the best way to assemble this dish. First, let’s look at the exact ingredients you will need. 

What You Need

Chicken breast meat
Yellow squash
Olive oil
Garlic clove
Italian seasoning 
Garlic powder
Garlic salt

How To Make Primavera Stuffed Chicken

The process for making Primavera Stuffed Chicken is very easy. Start off by taking your breast meat and making sure it is cut in your desired size for one serving. Then slice all of your vegetables as thin as you can. 

Next, create several slits across the top of the meat. They should NOT go all the way through your meat, be sure to leave at least ¼ deep of the meat not sliced. Your slices should also be about ½ inch apart. 

Preheat oven to 425°F. Brush your chicken with olive oil. 

Now that your meat has been slit, it is time to place your vegetables into the cut slits. For me, it works best to group my vegetables together. I would recommend taking a slice of each of your vegetables and place them into your cut slits if they are big enough. 

In a microwave-safe container, melt your butter. Drizzle your butter over your prepared chicken, and top with minced garlic and your desired seasonings. 

Cover the dish, and bake for 15-20 minutes, or until chicken is mostly cooked. Remove chicken from the oven and top with shredded cheese. Place chicken back into the oven and bake uncovered for 5-10 minutes, or until chicken reaches at least 165°F and cheese is started to turn golden in places. Remove from oven and serve while hot.

Kitchen Tips

Tip 1. If you are using a glass dish to bake your chicken, be sure to place it in the oven while your oven is preheating, so that it does not crack. To do this with your chicken baking, simply plan on baking your chicken a little bit longer, if necessary. 

Tip 2. When working with chicken, be careful to thoroughly wash your hands, and all surfaces the raw chicken has touched. 

Tip 3. To make your meal prep go faster, it works really well to have all of your vegetables sliced and ready to go before you even pull your chicken out to work with.

Now that you know what primavera stuffed chicken is, and just how easy it is to make, let’s jump in to making this recipe, with the following step by step instructions! 

Primavera Stuffed Chicken Recipe

Serves 2


1 large chicken breast, thawed and cut into two portions
1 medium zucchini, thinly sliced
Drizzle olive oil
1 yellow squash, thinly sliced
1 onion, thinly sliced
2 cloves garlic, minced
1 tomato, thinly sliced
1 red potato, thinly sliced
3 Tbsp butter, melted
¼ cup mozzarella cheese
Italian seasoning, to taste
Garlic powder, to taste
Garlic salt, to taste


Begin by thawing your chicken breast. Then once your meat is thawed, gather your desired vegetables, wash them, and allow them to dry. Slice all your vegetables as thin as you are able. Gather your remaining ingredients. Now it is time to create. 


Step 1: Preheat oven

Preheat oven to 425°F

Step 2: Slit Chicken

Taking your chicken, be sure it is cut into the size of your desired proportion for one person. Then slit your chicken, leaving at least ¼ depth of the chicken intact and placing your slits about ½ inch apart, across the entire chicken breast. Place your chicken into a greased baking dish, then drizzle with olive oil. 

Step 3: Vegetables

Insert your sliced vegetables into the slits of your chicken. If you have enough room, it often works best to insert one slice from each type of vegetable into one slit. 

Step 4: Butter

Melt butter and drizzle on top of your assembled chicken. Top with minced garlic, Italian seasoning, garlic powder, and garlic salt as desired. Cover and bake for 15-20 minutes. 

Step 5: Uncover Chicken

Remove chicken from the oven and check the internal temperature of the chicken. It should be getting close to 165°F. Top with Mozzarella cheese and bake an additional 5-10 minutes. Cheese should be starting to turn golden in places, and your internal temperature must reach at least 165°F. Once your chicken is fully baked, remove it from the oven, and serve hot. Enjoy!

This recipe is straight forward. The most complicated parts are often getting your vegetables to stay in the cut slits as you desire. If desired, you can cut the slices of vegetables in half to help them stay in place better. 

You will also want to be sure the internal temperature of your chicken reaches 165°F or higher. Check the temperature in a few different locations to be sure before determining it is finished cooking. If needed, place it back in the oven for longer, or turn the oven temperature up, to help it get done faster. 

If your chicken is still raw, but your vegetables look done, you can try covering the chicken as you cook it for a longer amount of time. This will help prevent your vegetables from burning.
