This recipe is a copycat recipe for Chick-fil-A’s Chicken, Egg and Cheese Bagel, from their breakfast menu. Follow the step-by-step instructions below to make it. Keep in mind, you are free to modify it so that it fits your tastes the best! Check out the list of ingredients below to make one breakfast sandwich. 

Ingredients

1 grilled chicken breast
3 large eggs
¼ cup whole milk
Salt to taste
Pepper to taste
Parsley as desired
2 slices American cheese singles
1 bagel, toasted (I used plain, however the original uses a Sunflower Multigrain Bagel)
Dressing, such as mayo or Chick-fil-A sauce (optional)

Description

If your chicken is not cooked yet, we will need to start with this. If it is already cooked, then great! Simply warm it up. 

Grill your chicken over medium heat, until the internal temperature reaches 165°F.

In a mixing bowl, combine eggs, milk, salt, pepper, and parsley. Whisk to combine. Grease a frying pan, and allow for the pan to warm before pouring eggs into it. Once warm, add eggs and allow for them to cook on one side before turning. Turn and cook the other side. 

Once the eggs are cooked, fold them in half and then half again. Add the cheese to the top so that it begins to melt on your eggs. 

Toast your bagel. 

Add the bottom layer of your bagel, chicken, eggs with cheese melted on top, and then your sauce and top of the bagel. Serve while hot and enjoy! 

Tips and Tricks

This recipe works best when using chicken that has been pre-cooked, however, you can cook your chicken as you prepare your breakfast sandwich. The original sandwich also uses breaded chicken, which you can find in the freezer section of your local grocery store. If you would like to make your own from scratch, simply use a boneless, skinless piece of breast meat and follow the instructions below. 

Create an egg wash, by whisking together 2 eggs, ¼ cup milk, 1 Tbsp dill pickle juice, and 1 Tbsp water. Pound your chicken so that it is about 1 ½ inch thick, then dip into the egg wash and allow for both sides to get a good soak. 

Next, create your flour mixture. Combine, ¾ cup all-purpose flour, 1 tsp baking powder, ¾ tsp powdered sugar, ¾ tsp paprika, ¾ tsp salt, 1/3 tsp pepper, and 1/3 tsp garlic powder. Dip your chicken into the flour mixture so that both sides are covered. Dip it back into the eggs, cover both sides, then bring it back into the flour and cover both sides. Allow your chicken to rest in the flour until your oil is warming. 

Using vegetable oil in a deep pan, warm your oil to 350°F. Drop your chicken into it and keep an eye on the chicken temperature and oil temperature. Do not let your oil heat any higher than 350°F. Cook until the inner temperature of your chicken reaches 165°F. Remove your chicken and sit on a paper towel to allow the oil to drain. 

Using breaded chicken will give your breakfast sandwich a heavier feel to it. If you are looking for a slightly lighter, healthier option, I would strongly recommend that you use grilled chicken. Feel free to mix this recipe up any way you prefer, especially with the type of bagel you use.
