Wildberry Pancakes and Café

Perhaps you have taken a trip to Chicago to visit their delightful restaurant called Wildberry Pancakes and Café. If you have, you know that they serve a wide variety of breakfast foods. All of which are very elegant and tasty. 

Top Menu Items

Some of Wildberry Pancakes and Café’s top menu items are dishes such as 2 Eggs Any Style, Barbacoa Chilaquiles Skillet, Butcher Block Skillet, Garden Skillet, Mexicana Skillet, and “Signature Berry Bliss” Crepes. Each of these top menu items ranges in price currently from $14.00 – $16.00+.    

Seasonal Specials

The Café also carries Seasonal Specials. These are made from fruits such as peaches that are often difficult to find when they are not in season. Making these meals delicious to enjoy, but only during specific times of the year. 

Natural Cage Free Eggs

All of Wildberry Pancakes’ egg meals are made with cage-free eggs. This means that the producer of eggs used in their Café provides eggs from hens that are allowed to roam free in an enclosed building or room with unlimited access to food and fresh water. However, these hens are not allowed outside in most cases. They carry many different egg dishes, from any style, to has brisket, to egg panini, to breakfast burritos to biscuits and gravy topped with eggs. There are many different options to enjoy eggs. 

Specialty Benedicts

Have you ever wondered if it was possible to make benedict multiple ways? Wildberry Pancakes and Café have found a way to make multiple different types of benedicts. Starting with classic eggs benedict and ending with Corned Beef Benedict.

Specialty Pancakes

Perhaps the Café is most known for their specialty pancakes. While they do offer pancakes with a cinnamon swirl or plain pancakes, most of their pancakes are topped with different kinds of berries. Perhaps their best dish is their signature berry bliss pancakes. This is a normal pancake topped with strawberries, blackberries, blueberry coulis, and vanilla anglaise. This is a delicious mixture and is fabulous for all times of the year. 

If you are like me, I enjoy the challenge of trying to figure out how I can make dishes at home, like what I enjoy when going out to eat. If I can make them for a fraction of what it costs going out to eat, then I am thrilled. 

Taking a closer look at this delicious signature berry pancake, it is actually simple to make at home. We will take an in-depth look at a step-by-step process to make these later on. First, we are going to take a look at what makes pancakes delicious all on their own.

Fluffy Cream Cheese Blueberry Pancakes

Another pancake favorite at the Wildberry Pancake and Café is the Blueberry Danish pancake. These pancakes are admired because of their light fluffy texture and delicious flavor. These pancakes are made with a cream filling, blueberries, almond streusel, cream cheese frosting, and blueberry anglaise. 

Berry Danish Pancakes

To make these pancakes you will need to include cream cheese right in the pancake batter. They are also best when you fold blueberries into your batter right before cooking, as well as top with additional blueberries after they have been cooked. 

Fluffy Cream Cheese Blueberry Pancakes

Berry Danish Pancakes Recipe:

1 ¼ cup all-purpose flour
1 ½ tsp baking powder
1/3 cup granulated sugar
1 large egg
1 Tbsp vanilla extract
¾ cup milk
1 Tbsp melted butter
2 oz cream cheese
¼ tsp salt
Oil for cooking

Cream Cheese Sauce:

1 tbsp cream cheese
1 tsp powdered sugar
1/2 tsp vanilla
1 1/2 tsp milk

Toppings:

Cream Cheese Sauce drizzled
Fresh Blueberries, washed and dried
Fresh Raspberries, washed and dried
Whipped Cream
Powdered Sugar, to dust
Maple sugar

Instructions:

In a mixing bowl mix together your dry ingredients first. Add into your mixing bowl, flour, baking powder, and sugar. 

Next add in egg, vanilla, milk, melted butter, cream cheese, and salt. Once all ingredients have been added, mix together. Mix only until lumps are gone. If your mixture appears to be too watery, add additional flour. 

To your mixture, add a handful of blueberries and gently fold berries into batter. Be careful to not overmix, or your batter will turn purple. 

Place your frying pan over medium heat and cover the bottom with oil. Once the pan is warm, add pancake mixture, shaped in whatever form you want them. Cook until pancakes become golden then flip to allow the other side to turn gold. Once cooked, remove from pan, garnish with toppings and serve. 

If you are needing to cook all of your pancakes before serving, you may store your pancakes in your microwave to keep them warm. 

Cream Cheese Sauce Instructions:

To make your sauce, add cream cheese and powdered sugar to the mixing bowl. Beat on high until it becomes smooth. Pour in your milk and vanilla and continue to stir your creamy mixture until it is smooth. 

Drizzle over pancakes as you wish, right before serving. Serve and enjoy! 

Wildberry Pancakes

Making your own berry pancakes is a surprisingly simple process. One of my favorite ways to enjoy pancakes is with a berry topping. We are first going to take a look at how you can make your own Signature Berry Bliss pancakes at home, and then I will share my favorite recipe with you, which is very similar.

Quick Recipe: Wildberry Pancakes

To make wildberry pancakes, there are four parts to these pancakes. The pancake, berries on top, the blackberry coulis, and the vanilla anglaise. We will take a look at how you can make each of these at home in the following sections. 

Pancake Recipe:

Starting with your pancake batter. You will need the following ingredients to make 8, 4-inch pancakes. 

Ingredients:

1 and 1/2 cups flour
1 tbsp sugar
1 tbsp baking powder
1 teaspoon salt
1 and 1/4 cups milk
1 egg
3 tbsp butter melted

Pancake Instructions:

In a mixing bowl, combine all of your ingredients, starting with the dry and adding the wet. Do not mix until all have been added. 

Once all ingredients are added, mix well, until there are no more lumps. Allow batter to rest while pan warms up. 

To cook the pancakes, you may use a frypan or a griddle. Prepare your pan by turning your heat to medium and spraying the bottom with a thick coating of cooking oil spray. 

Once the pan is warm, pour your batter onto the pan and spread it out. Allow to cook until the bottom is golden, flip over the pancake and allow the other side to cook until golden. 

Remove from pan and place onto a plate. Store in the microwave until you are ready to serve. 

Berries:

If you are using fresh berries, all you will need to do is rinse them off in cold water and allow them to dry completely before adding them to the top of your pancakes. 

Blackberry Coulis:

½ pound blackberries
3 ½ Tbsp granulated sugar
½ tsp vanilla
1/3 cup + 1 Tbsp water

Coulis Instructions:

In a medium saucepan add sugar and blackberries. Add water and stir together. Bring to a boil. Allow to simmer for 5 minutes and then remove from heat and add vanilla. 

Pour mixture into blender or food processor and blend until mixture no longer has seeds and is completely smooth. Run through a sieve if you can, before drizzling on top of your pancakes. You may use this coulis while warm or after it has cooled. Drizzle over pancakes before serving. 

Vanilla Anglaise:

1 cup heavy cream 
1 ½ cups whole milk
½ cup sugar, divided
1 tsp vanilla extract
6 egg yolks

Vanilla Anglaise Instructions:

In a heavy saucepan add cream, milk, and ¼ cup sugar. Allow to simmer over medium heat until the mixture begins to bubble. Allow to boil for 2 minutes, keeping a close eye on it so that it does not burn and stirring constantly. 

Remove from heat and allow to stand for 20 minutes. 

In a separate bowl, combine egg yolks and reminding sugar. Whisk together until combined. 

Temper your eggs by adding a scoop of your warm cream mixture to your eggs and whisking vigorously. Repeat three times until your egg mixture is warm. 

Pour your tempered egg mixture into your cream mixture and whisk. Return your mixture to medium heat. Stir constantly. Cook over medium for 5 to 7 minutes, or until mixture coats the back of your spoon. 

Once thick, remove from heat. Place into an ice bath to cool custard. This will help it cool down quickly and avoid overcooking. 

Once cooled, place in an airtight container and store in the fridge for up to four days. You can serve cooled or warm it back up. 

Drizzle over pancakes before serving. Serve and enjoy! 

Original Recipe:

Now that you know how to do the copycat pancakes, perhaps this seems like a lot of work. I am going to now share with you, my recipe for delicious pancakes that are not all that complicated. 

I have also found that sometimes fresh berries are quite expensive, so for the budget-friendly idea, I will also cover how to use frozen berries. I enjoy using the berry medley from Walmart. This comes in the freezer section and includes strawberries, blueberries, raspberries, and blackberries. 

For these pancakes, there are three sections, you may feel free to add cream cheese sauce or any of the other toppings mentioned above. I will also share with you the pancake recipe that I enjoy making for these specifically. However, if you are in a hurry, or just don’t feel like making that much from scratch, you may also feel free to use a box mix for your pancakes. There are many good mixes out there, that are inexpensive, and you literally only have to add water. So if that sounds better to you, just make your pancake mix according to your box, and skip over the pancake recipe, but be sure to pay attention to the berry recipe parts, as those are amazing and very easy to make. 

Pancake Recipe:

Ingredients:

1 and 1/2 cups flour
1 tbsp sugar
1 tbsp baking powder
1 teaspoon salt
1 and 1/4 cups milk
1 egg
3 tbsp butter melted

Instructions:

To make your pancakes, combine all ingredients in a mixing bowl and stir until you have no lumps remaining. 

Heat up a griddle or a frypan over medium heat. Spray cooking spray over the bottom of your pan so that it is completely covered. 

Once your pan heats up, scoop ¼ cup of batter at a time onto your warm pan. If you want your pancakes a bit bigger, then spread the batter out more. Allow to cook until they are golden on the bottom. You can also tell that they are getting ready to flip because small bubbles will appear on top of your batter. Flip over and allow the other side to cook until golden. 

Once cooked, place the cooked pancake on a plate and store it in your microwave until you are ready to serve. 

Berry Topping:

Ingredients:

½ cup mixed berries
1 tsp lemon juice
2 Tbsp sugar
1 Tbsp corn starch
1 cup water

Instructions: 

While your pancakes are cooking, prepare your berry topping. Frozen berries will work best for this. 

In a saucepan, add corn starch and sugar. Stir to combine before adding anything else. 

Next add in berries, lemon juice, and water. Stir to combine. Allow for the mixture to cook over medium heat, stirring occasionally until the mixture thickens. 

Once thick, remove from heat, serve and enjoy! 

Other Toppings:

Melted Grape Jelly
Powdered Sugar
Whipping Cream or Cool Whip

Assemble:

Once your pancakes are cooked, dish them up on the plates you will be using. Add fruit mixture and drizzle with grape jelly and sprinkle with powdered sugar. Top with whipping cream or cool whip. Serve right away and enjoy! 

Wildberry Pancakes are amazing to look at and surprisingly easy to make on your own. You definitely do not have to be a great cook to make these on your own. There are several tips, tricks, and shortcuts you can try out to make these all on your own, and still have them come out amazing!
