One Pot Loaded Baked Potato Soup Recipe

Now we are going to look at some details that are helpful to know when making this homemade copycat Saltgrass baked potato soup recipe. This recipe is great because it can be made in one pot, meaning they are not very many dishes to clean up after preparing the soup. Let’s first look at what loaded baked potato soup is exactly.

Loaded Baked Potato Soup

Our copycat recipe for loaded baked potato soup, makes a soup that tastes like you were having loaded baked potatoes in a bowl. This soup is essentially a loaded baked potato in liquid form. Loaded baked potato soup is made primarily from potatoes, in a milk-based liquid. There are other ingredients added as well, as well as several different optional ingredients you may choose to add as well. Let’s start first by looking at what potatoes are best for soup.

The Perfect Potatoes for Soup

The perfect potatoes for soup, specifically baked potato soup, are surprisingly not russet potatoes. The best kind of potatoes to use when making soup, are Yukon gold potatoes. Red skin potatoes will also work as well, however our favorite are Yukon gold potatoes. We like using Yukon gold potatoes because they do not fall apart as easily as russet potatoes. Yukon gold potatoes also taste better and cook better.

Prepping the Potatoes

When you start making your potato soup, a very important aspect is to properly prepare your potatoes. To prepare your potatoes, you will want to wash them well, to be sure there is no dirt remaining on the potatoes. Then you want to remove any spuds from the potatoes. These are the roots growing from the potatoes. Once your spuds are removed and potatoes are washed, set them aside so they can dry. When your potatoes are dried, you can cut them into small, bite-sized chunks. You will then want to rinse your potatoes once more and allow them to dry before they are added to your soup.

Get the Garlic Going

Garlic is another key ingredient to the soup. Garlic and onions are sautéed together in the bottom of your soup pan with a little butter or olive oil until your onions begin to turn a see-through color. This step is important because it allows the garlic to infuse into your entire soup, enhancing the overall flavors.

Bringing It All Together

There are a couple of ways you can assemble the soup. One way is to pre-cook your potatoes, by placing them in a microwavable bowl and covering all the potatoes in water. Then microwave for 2 to 5 minutes until they become tender to the touch. Doing this allows you to be sure your potatoes are completely cooked, without burning your soup. Or if you prefer, you can add the potatoes while completely raw, to your soup mixture and cook over medium-low temperature until the potatoes become soft to the touch. Later, we will walk you through the step-by-step instructions on how to assemble the entire soup recipe.

Tips for Making and Storing Roasted Garlic Mashed Potatoes

One easy tip to keep in mind when making our copycat Saltgrass baked potato soup recipe is to microwave your diced potatoes after they are covered in water. This allows you to speed up the process of making your soup significantly.

Storage

There are several different ways you can store your potato soup after this is prepared. The best way is to place it in the refrigerator, in an airtight container for up to 3 to 5 days. While potato soup can be frozen, we do not recommend that you freeze this recipe of potato soup, as its consistency and texture will change once it has been frozen. When this soup is frozen, and then thawed, it is not nearly as good as when it is fresh. We would recommend storing any leftovers you may have, in the fridge, then eating within the recommended 3 to 4 days. Now, let’s look at what is needed to make this yummy soup.

Directions

Methods of Preparing Salt Grass Steak Soup Step by Step:

Step 1: Prepare Potatoes

The first step in making the soup is to prepare your potatoes. To do this, wash them thoroughly and remove any protruding roots from the potatoes. Dice them into bite-size pieces, rinse once more, then allow them to dry.

Step 2: Sauté

In a large soup pot, add diced onions, minced garlic, and either butter or a drizzle of olive oil. Sauté over medium-low heat, until the onions become transparent. When onions are transparent, add a sprinkling of flour over the mixture. Stir until onions and garlic are coded in flour. Cook for one minute.

Step 3: Add Liquid

Next add milk, chicken broth, and heavy cream to the mixture. Stir until the onion mixture is combined with your liquid just added. Keep over medium-low heat stirring occasionally.

Step 4: Potato’s & Seasonings

When your liquid has been sufficiently mixed with the onion and flour mixture, add your prepared potatoes. Stir to combine. Then add salt and pepper. Mix well. Simmer stirring occasionally over medium-low heat, until potatoes are soft. If desired, you may include your optional celery and carrots at the same time your potatoes are added.

Step 5: Blend (optional step)

This portion of the instructions is optional. If you prefer the liquid in the soup to be a bit thicker, remove ¼ of the soup mixture and pour it into a blender. Blend until smooth. Then pour this mixture back into your soup pot.

Step 6: Sour Cream & Serving Suggestions

After your potatoes are completely cooked, turn your soup to the lowest temperature setting. Add sour cream, then stir to combine. Be careful to not turn your soup to a high temperature once the sour cream has been added, as it can easily curdle. When the sour cream is dissolved into the soup, dish the soup into your serving bowls, tab with desired toppings, serve and enjoy!

Chef’s Notes:

If you would like to speed up the process of making the soup, below is a method that will allow you to easily shave off 10 to 15 minutes of the cooking time for the soup. To have your dinner ready faster, microwave your potatoes before adding them to your soup. To do this you will add your prepared potatoes into a microwavable bowl, cover them entirely with water, place them into the microwave for 2 minutes. After the 2 minutes has passed check on your potatoes to see if they are soft. If not, microwave until they are soft when you insert a fork. Drain the liquid from your potatoes, then pour into your soup mixture. Doing this allows you to skip cooking the potatoes on your stovetop. All that’s left is to simply bring your entire soup to a simmer once all your ingredients are added. Then you can serve and enjoy!

Instant Pot Loaded Baked Potato Soup

The process for making instant pot, loaded baked potato soup is very similar to the stovetop process. You will want to begin by preparing your potatoes as instructed above.

Next, you will use the sauté function on your instant pot to cook the onions, garlic, and butter until the onions become transparent. Then, you will load your liquid and potatoes as instructed above. Use the microwave method mentioned above, to fully cook your potatoes before adding them to your instant pot. Or you can use your instant pot to cook the potatoes on high pressure for about 10 minutes before adding the rest of your ingredients.

We recommend using the microwave method as it is much faster. Once your potatoes are added to the instant pot along with your sautéed onion and flour mixture, and liquid, turn your instant pot to its warm setting and allow the soup mixture to warm thoroughly. Add your salt and pepper, then sour cream. Dish up, and add the desired toppings, serve, and enjoy.

Slow Cooker Loaded Potato Soup

There are two ways you can use a crockpot to make loaded baked potato soup. The first way is to prepare your soup as instructed above on the stovetop, then transfer it to your crockpot. If you are transferring to your crockpot before your potatoes are completely cooked, you will want to allow your crockpot to be on high for about four hours. But if transferring after your potatoes are fully cooked, turn your slow cooker to low and serve whenever you desire. Hold off on adding your sour cream until 30 minutes before you intend to serve.

The other method you can use to prepare your loaded baked potato soup in a slow cooker is to add all of your ingredients except for the sour cream to your crockpot stir, then allow to simmer on low for 6 to 8 hours. About 30 minutes before you intend to serve, add your sour cream. Stir until dissolved, then serve and enjoy.
