There are two main variations and how you can make this recipe. The main difference is that one recipe includes broccoli, whereas the other one does not. Our recipe below will walk you through the process of including it, as this is our preferred method to have a better-rounded dinner in one pot. However, if you prefer to make this without broccoli, simply omit this ingredient. Below is your ingredient list.

How To Make Chicken Divan In A Slow Cooker

CHICKEN: If you are using raw chicken you will want to be sure to start off by cooking your chicken in the slow cooker until it is fully cooked. For me, that typically takes a couple of hours on high. For crockpots that do not have a lid that seals tightly, it may take longer to fully cook your chicken. 

RICE: When your chicken is cooked you can add in your long-grain rice, as well as water, butter, and salt. You will be adding this to your chicken mixture that is already in the crockpot. Then shred the chicken and stir it, to combine it with your rice. You are going to cook it on high while covered for 1 hour and 30 minutes. Please note this cooking time may vary depending on what kind of crockpot you have.  

BROCCOLI: Now it’s time to add your broccoli if you desire. You can use frozen or fresh broccoli for this. Make sure that if you are using fresh broccoli your broccoli has been washed and dried and cut into florets. Add to your crockpot on top of the sauce. Allow between 30 minutes to 1 hour for your broccoli to fully cook. 

SAUCE: Once your chicken and rice have fully cooked in your crockpot, you will want to begin mixing up your sauce. In a mixing bowl, you will combine mayonnaise, cream of chicken soup, and lemon juice together. Stir to combine. Once mixed, you can pour this on top of your rice mixture. 

TOPPING: At the same time as your broccoli and sauce are added to the mixture, you will also want to finish off with your topping. Your topping can simply be shredded cheddar cheese that you place on top. Or you may finish it off by adding corn flakes, crushed chips, or french-fried onions if desired. Cover and allow to cook until your cheese is melted and your broccoli is soft.

1 pound chicken breast
2 cups long-grain white rice
4 cups water
3 Tbsp butter
½ tsp salt
½ cup mayonnaise
21 oz cream of chicken soup
1 Tbsp lemon juice
12 oz broccoli florets

There are two ways you can prepare this meal. The first is to combine your ingredients all at once, into the crockpot, and cook it over low heat for 6-8 hours. The second is to add portions of it in sections and layer it as you go. The second process is the one we are going to walk through. However, please note you may most definitely dump everything into the pot and cook on low heat. 

Steps to Make It

Step 1

Begin by adding your chicken breast to the crockpot and cover with a cup of water. Cook over high heat until chicken is fully cooked, then shred the meat. 

Step 2

Add the rice and water to your crockpot. Cook on high for 1 hour and 30 minutes, or until your rice is fully cooked. Add more water if needed. 

Step 3

Top with broccoli florets. 

Step 4

In a mixing bowl, combine mayonnaise, cream of chicken soup, and lemon juice. Stir to combine. Pour on top of broccoli in the crockpot. Smooth over the top. 

Step 5

Sprinkle the top of your mixture with shredded cheese, cover, and cook until your cheese is melted. If you want it ready right away, use your high heat setting. When you intend to be away for a while, heat it over the lowest heat setting. If desired, top with corn flakes, serve, and enjoy! 

Notes

If you are going to be cooking this while you are away all day, you will most likely want to add 1 cup extra water, and you will also want to add everything at the same time, then stir to combine. Leave the cheese to add on top, when you get home.

Chicken Broccoli Divan in the Crockpot or Oven

Chicken Divan that is made with broccoli can be prepared in a crockpot or you can prepare each portion of the dish on the stovetop then transferred it to a casserole dish. For example, you would pre-cook your chicken separately, then prepare your rice according to the package instructions on the stovetop. Once both are completely cooked you would assemble the dish. Take a casserole dish and spray it with cooking spray then add your rice layer followed by chicken and broccoli, topped with your prepared sauce, and finished off with shredded cheese. You would then bake this dish at 375°F until it begins to turn brown around the edges and your cheese is melted. Remove from the oven and serve immediately.
