1 can Fire-roasted diced tomatoes, or 1 cup tomato sauce, or 4-6 Roma tomatoes

1-2 dried Pasilla Negra or Pasilla Ancho Chile
4-5 garlic cloves
8 cups broth, stock or water
1 tsp Mexican oregano (optional)

Copycat Qdoba Chicken Tortilla Soup Recipe
2-3 Tbsp vegetable oil (or 3 Tbsp butter)
2 medium onions, minced
4 small, sweet peppers, minced
5-6 cloves garlic, minced
1.25 oz chili seasoning mix
Cumin to taste
1 dash crushed red pepper seasoning
32 ounces chicken broth
28 ounce can crushed tomatoes
2-14.5 ounce cans diced tomatoes
3 cups cooked chicken, shredded (or use this Qdoba Chicken Recipe)

In the bottom of your soup pan, drizzle your olive oil, then add minced onions, peppers, and garlic. Sauté over medium heat for about 5 minutes or until onions become translucent in color.
Add in your seasonings, including, chili seasoning, cumin, red pepper seasoning, and any others you desire. Stir to combine.
Pour in chicken broth and stir so that no lumps remain from the seasonings. Turn heat to medium or medium-low.

If you want to make your soup a bit spicier you can substitute the sweet peppers for poblano peppers and, also add 3 tsp Jalapenos that are seeded and diced.

However, those of you that prefer a bit more of a kick in your soup may enjoy using Poblano peppers, mixed with a few jalapeños. You may also enjoy using dried Pasilla Negra or Pasilla Ancho Chile in place of our recommended sweet peppers if you prefer a bit of spice to your soup. No matter what you choose to use for your peppers in the soup, it will be delicious. As you prepare the soup, no matter what kind of peppers you use, they will be added to the soup when you are sautéing the onions.
