Making Copycat Rafferty’s Potato Soup
Before you start making Rafferty’s potato soup, you may have a few questions on how to go about it. Here are a few, common questions that get asked, along with our answers to help you get started.
Potatoes: Skin Off or Skin On?
Should you leave the skin on your potatoes or peel them? The answer to this question can be a matter of preference. Whatever you decide is not going to majorly impact your soup. Personally, I prefer using red or yellow potatoes and leave the skins on. Leaving the skins on helps the potatoes to hold their form better, and not fall apart quite so easily. I would recommend that if you are using normal baking potatoes, that you remove the skin.
What kind of potato is the best for Rafferty’s soup recipe?
Any kind of potato will work for this soup. However, the best tasting kinds are boiling potatoes, such as red potatoes, Yukon gold potatoes, and creaming potatoes.
How do you keep potatoes from getting mushy in soup?
The best way to keep your potatoes from getting mushy is to cook them so that they are just done. If they are barely past the crunchy stage, they will not get mushy as easily. You may also try adding a pinch of salt to them as they are boiling. If you use baking potatoes, those are more likely to break up and become very mushy. Try using red or gold potatoes for better results.
How do you fix bland potato soup?
The best way to fix bland potato soup is to add more seasoning! Following the instructions to make this recipe for Rafferty’s potato soup will not give you bland soup. Plus you can always add more garlic powder, garlic salt, salt, and pepper to help increase the flavoring if desired.
How do you thicken potato soup?
Before you thicken anything, it is a good idea to allow it to cool first. Many soups will thicken quite a bit once they begin to cool. If you would like your potato soup to be thicker, you may take a bit of the liquid and pour it into a cup with a tablespoon or two of flour or corn starch. Once you mix this so that they are no lumps, you can pour it back into the soup. However, this step is not needed for this recipe. It is delicious, just as the recipe states.
Can I Freeze this Potato Soup for Later?
Yes! You most definitely can freeze potato soup. The best way to freeze this soup is to place it into a sealable plastic bag or airtight container and freeze it for up to three months.

Rafferty’s Potato Soup Recipe – Homemade Tasty Recipe
Number of Servings: 4
Preparation Time: 25 minutes
Ingredients
6-8 medium potatoes, red or yellow skinned, diced
1 medium onion, diced
8 oz cream cheese, diced
1 can cream of celery soup
1 can cream of mushroom soup
1 cup milk
1 cup margarine (or butter)
1 tsp garlic salt
Salt and pepper to taste
2 Tbsp bacon bits, optional
4 Tbsp shredded cheddar cheese, optional
2 Tbsp green onion, chopped
Instructions
Step 1: Cook Potatoes and Onions
In your soup pot over medium heat, add diced onions and a drizzle of olive oil. Allow to sauté until onions are just beginning to turn transparent in color. Add potatoes and cover onions and potatoes in water. Bring to a boil and allow to simmer until potatoes are cooked through. You can test the potatoes by inserting a fork, if it goes in easily, they are done.
Step 2: Add In The Milk and Cream Cheese
Next, cube your cream cheese and mix it into your soup pot until it is completely dissolved. Once the cream cheese is melted in, add milk, and stir to combine.
Step 3: Add The Rest Of The Ingredients
Now take your cans of cream soup and add them into the mixture. Stir until they are combined. If desired, add melted margarine. Season with garlic salt, salt, and pepper. Stir to combine. Allow your soup to simmer over medium-low heat for a few moments before serving.
Step 4: Serve and Garnish
Ladle your soup into serving bowls and garnish the top with shredded cheese, green onions, and bacon bits if desired. Serve immediately and enjoy!
Notes:
If this recipe is missing one thing, I would say that it could use chunks of bacon throughout the soup. I recommend chopping up some pre-cooked bacon chunks and adding them before dishing your servings up. This makes the soup taste even better if that is possible!
Another note is that you may substitute out the cream of celery or cream of mushroom for a cream of chicken if you desire. These soups can easily be exchanged for each other.
If you are looking for a lower fat option, try leaving the margarine out. It is really not needed for this recipe at all.
Chef Tips
For thicker potato soup, allow your soup to rest for about five minutes before serving. This soup will thicken as it cools.

Quick question….shouldnI drain the potatoes before adding the cream cheese?
Hi Nancy,
Good question! You do not need to drain the water from the potatoes before adding the cream cheese. Your water and milk will be the base for the soup and will help to liquify your cream cheese and condensed soup. I hope this helps! Enjoy your soup! 🙂
