Red Robin Chicken Tortilla Soup Recipe


1-2 chicken breasts
Olive oil drizzle
1 medium onion, diced
2 medium green peppers, diced
2 Tbsp minced garlic

14.5 oz diced tomatoes
15 oz canned black beans, rinsed and drained
15 oz canned corn, drained
5-6 cilantro leaves
1/8 cup all-purpose flour (or GF flour, or cornmeal)
1 Tbsp lime juice
1-3 tsp Mexican seasoning
¾ tsp salt (or to taste)
½ tsp pepper (or to taste)
Paprika, optional and to taste


Dollop sour cream
Shredded cheddar cheese 
Chopped green onions
Avocado slices
Lime wedges
Cilantro sprigs


Before You Begin…

Start off by cooking your chicken. My favorite method for cooking chicken breasts is to add them into my mini crockpot and cook them on high, with 1 cup water, garlic powder, and a garlic salt mixture. You can cook your chicken any way you wish, or you can even use a rotisserie chicken from the grocery store that is precooked for you. 

Step 1

In the bottom of your soup pan, add a drizzle of olive oil, then add onions, green peppers, and garlic. Sauté over medium heat until the onions start to turn transparent. 

Step 2

Next, add tomato paste, water, and chicken broth powder. Stir to combine, and sauté for 2 minutes over medium heat. 

Step 3

Add diced tomatoes, shredded chicken, black beans, corn, and cilantro leaves. Stir and bring to a simmer. Simmer over medium-low heat for 5 minutes. 

Step 4

In a small mixing bowl, add 1/8th cup flour. Then remove 1 cup of the soup’s liquid and add to the mixing bowl. Whisk until no lumps remain. Pour the mixture into your soup pot. Stir until combined. 

Step 5

Add lime juice, Mexican seasoning, salt, pepper, and paprika as desired. Add any additional seasonings you desire. Stir until completely mixed in. Allow to simmer, then serve when you wish. Top with desired toppings, serve and enjoy! 

Tip: If you enjoy heat or spice, try adding some jalapenos, red pepper flakes, or even a bit of hot sauce to your soup. Add small amounts, and taste as you go so that too much is not added.
