Newman E Drake made his first pound cake in Brooklyn New York in 1888 and sold them by the slice. He later became popular for his coffee cakes and rivaled Hostess. It was in the 1992 episode of the television sitcom Seinfeld, specifically “The Suicide” episode that Drake’s product line received national exposure and became famous.

Preparation

Below are some notes about the preparation of the recipe.

Cake Flour – For the best results, you’ll want to use cake flour for this recipe. It really does make a difference. 

Buttermilk –  If you don’t have any buttermilk on hand,  you can make some by adding about a teaspoon of lemon juice on the bottom of 1/3 cup measuring cup. Then fill the rest with milk. Let it sit for about 5 minutes before adding it to the batter mixture.

Warm Egg –  If you forget to set your egg out in advance to warm it to room temperature, you can simply place it in a bowl of warm water while you prepare the other ingredients and let it warm that way.

How To Make Drake’s Coffee Cake

Drake’s coffee cake is made in two parts. They’re personal sized cakes made in a cupcake pan. The cake batter is put in the bottom of the pan and the delicious crumb top is placed on top. They’re baked to perfection and best when enjoyed fresh out of the oven and warm.

Ingredients

Crumb Topping:
1 stick butter
1/3 cup sugar
1/3 cup dark brown sugar
¾ tsp cinnamon
¼ tsp salt
1 ¾ cup cake flour

Cake:
1 ¼ cup cake flour
½ cup granulated sugar
¼ tsp baking soda
¼ tsp salt
6 tbsp butter
1 egg, warmed to room temperature
2 tbsp plain Greek yogurt
1 tsp vanilla extract
1/3 cup buttermilk
Powdered sugar for dusting

Directions

For the Crumb Topping:
1. Cut the stick of butter into several thin pieces. Place in a microwave safe bowl and heat for 20 seconds. Stir to melt any chunks that remain.

2. In a large mixing bowl, combine sugars, salt, cinnamon, and flour. Slowly add the melted butter. The batter will form clumps while some of the dry mixture will remain at the bottom of the bowl. Don’t overmix. Set aside.

For the Cake:
1. Preheat oven to 325F degrees.

2. Grease a 12-muffin tin pan.

3. In an electric mixer, using a paddle attachment, mix flour, sugar, baking soda and salt.

4. Add softened butter and beat for a minute or so until no chunks remain.

5. Combine egg, yogurt, vanilla and buttermilk in an airtight container. Shake well until completely smooth.  Add to the mixing bowl with the dry ingredients. Mix until just incorporated.

6. Add batter to prepared baking pan. Fill each cupcake about halfway full of cake batter.

7. Spoon in crumb topping.

8. Bake for 10 minutes.  Turn the pan around and bake for another 11 minutes. Allow to cool. before serving.
