While those of us not in France, refer to this delicious soup as French Onion Soup, to those who live in France, it is simply called onion soup. Legend says that King Louis XV was hosting a hunting party at his lodge, only to discover that his pantry only contained, butter, champagne, and onions. This is where the soup originated from, and has today become the lovely, sweet, tangy, yet savory dish topped with begets and delicious melty cheese, that we all enjoy.

How To Make It

Kitchen Equipment:

To make this recipe, you don’t need a lot of fancy kitchen gadgets. You will simply need, a large soup pot, a knife and cutting board, and a spoon or ladle to stir with.

To make the delicious soup, you will begin by melting your butter, then sauteing your onions, garlic, bay leaves, and thyme . Then mix in your wine and allow it to cook off completely, before sprinkling your onions with flour. Cook your onions coated with flour for a few moments, before adding beef broth and letting your soup simmer for a few minutes. Then, dish your soup into bowls, top with slices of baguettes, and finish off with your sliced or shredded cheese. Place your soup into the broiler for a few minutes, until the cheese is melted, and the top is golden brown. Remove from the oven, and serve right away, enjoy! 

Recipe Modifications:

This recipe needs no modifications to make it better. There was one modification that I like to make, and it is simply to make things easier. The original recipe calls for using fresh thyme sprigs, and bay leaves, then removing the stems before you dust with flour. I prefer to use dried bay leaves and thyme. If you use dried, you will not need to worry about pulling the stems out of the soup, before adding flour. 

Cooking tips:

Onions. The best cooking tip for this soup recipe is to not be afraid you are cooking your onions too long. When you are finished cooking the onions, they should be translucent in color, if they are not, then they have not been cooked enough. 

Wine. Be sure to completely boil the wine off before moving on. Doing this allows for the flavor to remain but does not throw off the composition of the soup in any way. 
Flour. When you add the flour, sprinkle it onto the onions, in a light layer. This will help to prevent the clumping of the flour in your soup. 

What kind of cheese is best for French onion soup?

The best kind of cheese to use is a thin slice of Gruyere. However, shredded will also work well. If you do not have gruyere, a good melty cheese will work wonderfully as well. Cheeses such as mozzarella work as a great substitute for gruyere. 

Leftovers:

If you have leftovers that have not been combined with a slice of baguette and broiled with cheese, it can be kept in the fridge in an airtight container for three to four days. However, if you have leftovers that have already been combined with baguettes and cheese, these are less likely to be good at a later date. In this case, it is best to go ahead and toss the leftovers.

Tyler Florence’s French Onion Soup Recipes

Ingredients:

½ cup butter
4 large onions, sliced
2 garlic cloves, chopped
2 bay leaves
Salt and pepper to taste
2 fresh thyme sprigs
1 cup red wine
3 heaping tablespoons all-purpose flour
2 quarts beef broth
1 baguette, sliced
½ pound grated gruyere (or mozzarella) 

Directions:

Gather all your ingredients and kitchen utensils. Then prepare your onions, by cutting them into thin slices. Now you are ready to make your delicious soup! 

Instructions

Step 1: Butter

In your soup pot, add your butter and cook over medium heat until melted. 

Step 2: Saute Onions And Seasoning

Add your sliced onions, chopped garlic, bay leaves, thyme, salt, and pepper. Allow for the mixture to cook over medium-high heat until onions are translucent in color and become caramelized. This typically takes about 20-25 minutes.  

Step 3: Wine

Add your wine, and boil for about 5 minutes, or until wine is completely evaporated. Remove and discard bay leaves and thyme sprigs. 

Step 4: Flour

Dust flour on top of the onion mixture and gently stir to combine. Turn your burner temperature down to medium-low and cook for 5-10 minutes, to remove the raw flour taste. 

Step 5: Beef Broth

Now it is time to add your beef broth to the soup mixture. Turn your heat back up to medium-high and simmer for 10 minutes. Allow to continue to warm, or place into an oven save bowl. 

Step 6: Broil

Pour your soup into an oven save bowl and top with baguette slice, and cheese. Place soup into the oven on high broil. Watch it carefully so that it does not burn. Broil for about 2-3 minutes, just until the cheese melts and turns a golden brown. Remove from the oven, and serve while hot. Enjoy! 

Alternative Method: 

If you prefer to not place the entire bowl of soup into the oven to broil, another great method is to slice your baguette and place it on a cookie sheet. Top the bread with cheese and even butter if you want, then place them in the oven for a few minutes to broil. Remove and float in your soup.
