Make these delicious atomic brownies, you will need to gather the following ingredients before you begin. 

What you’ll need:

Butter. We recommend using salted butter that has been browned. Using browned butter is an optional step, however, you will want to include soft butter in the recipe no matter what. 

Sugar. For best results, we recommend using granulated sugar for this recipe instead of other optional sugar substitutes. Do you like more of a fudgy kind of brownie, you can also try substituting a bit of the granulated sugar for brown sugar. 

Eggs. Large eggs will be needed in this recipe to help hold your brownies together and make them amazing. 

Vanilla. Vanilla extract is used as a flavoring for these delicious brownies. You can use regular vanilla if you prefer, however, we typically use vanilla extract and it works out really well. 

Cocoa powder. To make these brownies chocolate flavored, we use baking cocoa powder for these brownies. You may also use Dutch cocoa powder if desired, however, your basic baking cocoa works well. 

Flour. We recommend using all-purpose flour in these atomic brownies. If needed, all-purpose flour may be substituted for gluten-free all-purpose flour variation. 

Baking powder. Baking powder is a necessity, as it is your leavening agent for this brownie recipe. 

Salt. For this recipe, we typically use iodine salt, however, kosher salt and sea salt work well also. 

Chocolate chips. You may use your choice of chocolate chips for baking tips if desired. Our preference is to use dark chocolate chips, however semisweet or milk chocolate work well also.

We have found dark chocolate and the desired chocolatey sweetness to be delicious, but it is not overpowering in the sweetness.

Before you begin, gather all of your ingredients to be sure you have everything that you need on hand. You may also add in additional ingredients such as nuts, or other types of chocolate or goodies if desired. When all of your ingredients are gathered, you can begin baking!

To begin making the best atomic brownies, there are a few basic steps that you can follow. To begin, you will want to brown your butter. 

How to Make Brown Butter

You get browned butter by actually cooking the butter. This is the first step in making your delicious atomic brownies. 

To begin, place your butter in a saucepan over medium-low heat keeping a very close eye on it. Cook your butter, and as it melts, stir it. 

As your butter cooks, it will begin to foam, and then the foam will recede and you will notice that your butter has begun to turn a golden brown, or amber color. 

As soon as you begin to see these flakes of gold appear in your butter, remove it from the burner right away. You now have your browned butter to work with.

How to Make this Brownie Recipe from scratch

Once your butter has browned, you can begin making your brownies. To make your brownies, you may transfer the browned butter to a mixing bowl, or simply add all of your ingredients into your saucepan where you melted your butter.

Combine butter with your granulated sugar, eggs, cocoa powder, baking powder, salt, all-purpose flour, and vanilla. Stir to combine. Once no lumps remain, add chocolate chips, and stir just until they are mixed in.

Preheat your oven to 350°F. Spray a 9 x 13 pan with cooking spray, then pour your batter into the baking dish and bake for approximately 30 to 35 minutes. Remove the brownies from the oven and allow for them to cool before slicing and serving.

If desired, there are many different additions you may add into your atomic brownies. Below are a few ideas of additions you can add to make your brownies extra delicious. This is by no means a comprehensive list, so get creative and add whatever sounds delicious to you.

Recipe For Atomic Brownies

Ingredients

Brownie Base

2 cups salted butter

4 cups sugar

8 large eggs

¾ cup cocoa powder

2 cups all-purpose flour

1 tsp baking powder

1 tsp salt

2 tsp vanilla

8 oz chocolate chips

Chocolate Drizzle

1 cup chocolate chips, melted

¼ cup heavy cream

Instructions

Steps:

  1. Begin by browning your butter in a light-colored saucepan. Take your butter and place it in the saucepan over medium-low heat, and melt, stirring occasionally. Continue cooking as it starts to foam, then gold flakes will appear. As soon as you see it begin to turn a golden or amber color remove it from the heat immediately. 
  2. Preheat the oven to 350°F.
  3. Next, mix in granulated sugar, eggs, cocoa powder, flour, baking powder, salt, and vanilla. After the mixture is combined fold in chocolate chips, just until they are mixed in. 
  4. Take a 9 x 13 baking pan and spray the bottom with cooking oil. Pour your brownie batter into the pan and place it into the preheated oven. Bake for approximately 30 to 35 minutes, or until brownies are done to your liking. Remove from the oven and allow to cool before serving. Serve and enjoy. 
  5. Optional Chocolate Drizzle. The chocolate drizzle, add your chocolate chips, and heavy cream into a small saucepan, and heat over a low temperature stirring occasionally until your chocolate chips are melted. Remove from the burner, and drizzle over your cold brownies before serving. 

Notes

Please note that the process of browning the butter is optional. If you do not choose to brown your butter before making the brownies, you will simply want to be sure that your butter is soft.

Classic Mint Chocolate Brownies

If you are a lover of all things mint, our delicious atomic brownies can be easily adapted into a delicious mint chocolate brownie recipe.

To do this, you can simply prepare the brownies as instructed above, then add a layer of mint frosting, along with a layer of chocolate on top. For details on the two additional layers, please see the below paragraphs. 

Mint Frosting Layer

Make your mint frosting, combine ½ cup of Crisco, with ½ stick of butter. Whip them together until they are creamy, then add 1 tablespoon of milk, ½ pound of powdered sugar, and 1 teaspoon of peppermint extract.

If desired, you can also add a little bit of green food coloring. Stir your frosting until thick and fluffy. Then, you can add your frosting on top of your cooled brownies. 

Chocolate Layer

Chocolate layer, combine ½ cup of butter, with one cup of chocolate chips. Microwave for 30-second intervals in a microwave-safe bowl, stirring in between until melted. Pour over the top of your frosting layer and refrigerate until solid. Then cut into your brownie pieces, serve, and enjoy.

There is a debate as to what type of brownies are better. Let me tell you how to achieve your desired texture of a brownie. There is the thick, more cake-like brownie, and then there is the fudgy brownie. Both are good, but you may have a definite leaning as to which type of brownie you prefer. 

To achieve a cake-like brownie, the trick is to include a little more flour, to make your brownies thicker, and more cake-like. 

On the other hand, if you prefer fudgy or brownies, you should reduce the amount of flour included in your brownie batter slightly. This will give you more of a fudge-like brownie.
