This is our favorite shortcake because it’s a bit sweeter than the traditional biscuit. It uses a homemade pound cake and kicks it up with the tasty sweet, tart fresh raspberries, layered with whipped cream.

Raspberry Shortcake is the New Strawberry Shortcake

Raspberries have become so popular that some feel that raspberry shortcake has become the new strawberry shortcake. Raspberries have such a juicy aspect and a delicious flavor that is sweet, but not too sweet and one that is tart, but not too tart. In our opinion, raspberries have a just-right flavor.

Strawberries used to be the traditional go-to fruit for shortcakes, but that doesn’t have to be the case. Why not use fresh picked raspberries, or another favorite berry or fruit to change things up?

The Biscuits

The biscuits don’t have to be traditional, ordinary biscuits for raspberry shortcake. Consider using a cake mix, pound cake, angel food cake, cake donuts, shortbread, or cookies or whatever your favorite cake or biscuit like item is.

As a time-saver, you might also choose to buy this item already prepared at your grocery store bakery. There are no restraints when it comes to choosing your favorite biscuit.

Macerating Raspberries in Sugar

Part of the process of making raspberry shortcake involves soaking or macerating the raspberries in sugar. You’ll want to take into consideration whether sugar is a factor in your biscuit or not, to determine how much sugar you want to add in the raspberries.

For example, if you’re using more of a traditional biscuit that is unsweetened, you’ll want to add more sugar in your raspberries to give them more of a sweetened punch. But if you’re using an already frosted cake donut as your biscuit, you’ll likely want to back off on the amount of sugar that is added to the raspberries.

The purpose of macerating the raspberries in sugar is twofold. It helps to sweeten them. And it also helps to bring out their juices.

You can enhance the flavor of the whipped cream and make the vanilla bolder by using vanilla bean paste in your recipe. But if you prefer to not use vanilla bean paste or if you don’t have access to vanilla bean paste you can replace it with vanilla extract.

For the fruit, you can use whatever your favorite fresh berry or fruit is. Blackberries, blueberries, strawberries and raspberries all work well and taste great.

For the whipped cream, our favorite is real whipped cream made from heavy cream. But you might also choose to use ice cream, frozen whipped topping, or a spray can of whipped cream.

Yes, either vanilla extract, vanilla bean or vanilla bean paste will work to flavor the whipped cream. Any one of these three items will do a good job of providing a great vanilla flavor.

Instructions

For Cake
1. Preheat oven to 350F degrees. Prepare cupcake pan and line with cupcake papers.

2. In a medium mixing bowl, mix together flour and baking powder. Add eggs, sugar and milk. Mix thoroughly. Slowly add melted butter and vanilla extract. Stir until mixed.

3. Fill cupcake papers about ½ full with batter. Bake for about 15 minutes until a tooth pick inserted in the center comes out clean.

1. Rinse raspberries in cool water. Set aside enough whole raspberries for garnish.

2. Mix remaining raspberries with sugar and lemon juice. Smash with a spoon. Set aside and allow them to macerate.

For Whipped Cream
1. With an electric mixer, mix heavy whipping cream, sugar and vanilla on high until stiff peaks begin to form.

To Assemble
1. Confirm that shortcakes have completely cooled before assembling. Remove shortcake from cupcake papers and slice in half.

2. Layer cake with raspberry sauce and whipped cream.
