Make The Batter

In a mixing bowl, you’re going to combine all of your ingredients, and then whisk until no lumps remain. If time allows, we strongly recommend letting your batter rest in the fridge for approximately 30 minutes before making your crêpes. This is not a requirement; however, your crêpes are likely to turn out much better if you allow the rest time. 

Make The Crepes

When you’re ready to make your crêpes, take a medium or large (approximately 7 inches in diameter or larger) and place it on your burner over medium heat. Allow just the pan to heat until the pan itself is hot. 

Spray your pan with non-stick cooking spray. Then take ¼ cup of batter, and pour it into the center of your pan. 

Immediately pick the pan up from the burner and tilt it every which way so that your crêpe spreads out thin and covers the bottom of your pan.

Place the pan back on your burner and allow your crêpe to cook until it is ready to turn over. 

How to tell when your crepe is ready to turn

While cooking, watch for it to turn a light golden brown on the bottom, and you should see the edges of your crêpe begin to pull away from the pan. These are both ways to tell when your crêpe is ready to turn over. 

When you see your crêpe bottom begin to turn light brown, near the edges of your crêpe, and it is pulling away from the pan, carefully use a spatula and flip your crêpe over. Allow the crêpe to cook for approximately one minute on the remaining side before placing your crêpe onto a plate.

When your crêpes have finished cooking, you can plate them, then add your desired fillings before folding them. Don’t sweat the first. Usually, the first crêpe does not turn out quite right. This is because your pan has not been seasoned yet, so don’t sweat the first one if it doesn’t turn out perfectly. 

Use non-stick spray. Be sure to spray your pan after every crêpe is made. This will ensure that your crêpe does not stick, and you can move it without having your crêpe stick to your pan. 

Keep warm. Keep your crêpes warm until you are ready to serve. To do this we recommend placing them into a cake pan in the oven and covering them with foil on your oven to warm setting. 

Avoid lumps. Sometimes it is difficult to avoid lumps when making crêpes with pancake mix. We recommend adding your liquid slowly, and mixing as you go this way, you’re less likely to end up with as many lumps.

Non-stick trick. The best way to keep your crêpes from sticking to the pan is first to use a fresh nonstick pan. If your pan has scratches or dings in it, it is not likely to work as well. Also be sure to use a nonstick spray in between crêpes so that your crêpes will be easily removed from your pan. 

Flip crêpes. Knowing when to flip crêpes can be a challenge. Ideally, you want to watch for them to start pulling away from the pan around the edges of your crêpes. Then take a spatula and insert it underneath, you can raise the edges slightly, and you should see a lovely golden brown color on the bottom. That is when you know they are ready to flip.

Use a thin spatula. To flip your crêpes, it works well to use a thin spatula. Take your spatula and insert it underneath your crêpes then carefully flip them over and continue cooking for a short amount of time, or just until they turn a light golden brown on the bottom.
