How to Make Brownies without Butter

Surprisingly, it’s not all that difficult to make brownies without any dairy products in them.

In the recipe below, we are going to walk you through an easy step-by-step process that will show you how you can make delicious dairy free brownies.

What is Dairy Free?

Dairy free simply means that this recipe does not contain any milk products.

Dairy refers to products that come directly from a cow. This recipe is made using ingredients that do not come from milk from a cow, nor do they contain milk products from a cow. 

Allergy Friendly Brownies

This recipe is especially helpful if you have chocolate lovers in your house, that are lactose intolerant, or not able to tolerate dairy products.

With this recipe you can still enjoy the delicious chocolate flavor of brownies, without having to worry about allergies affecting yourself, or those around you.

Let’s look at the ingredients you need in order to make these delicious dairy free brownies. Then we will walk you through the step-by-step process of how to go about making these brownies.  

Dairy Free Gooey Brownies Recipe

Ingredients in Dairy Free Brownies

Coconut oil. Coconut oil is a recommended ingredient to use in place of butter. Coconut oil usually comes in a jar, in a solid state, from your local grocery store.

We recommend that you melt the coconut oil and some chocolate together before adding it into the brownies.

If you want to use another ingredient besides coconut oil, some other good alternatives include butter flavored Crisco, olive oil, vegetable oil, or even mashed bananas, or applesauce. 

Chocolate. When choosing the chocolate for your brownies, it’s important that you look for dairy free chocolate.

You can find dairy free chocolate chips at most large grocery stores, but be sure to read the ingredients to make sure they are dairy free. 

Sugar. In this recipe, we recommend using a mixture of granulated sugar and brown sugar. For the brown sugar you can use either light or dark brown sugar either one will work. 

Eggs. Eggs are recommended to be used in this brownie recipe as well. They will help your brownies rise and hold your brownies together.

If you need an alternative to eggs, you can substitute mashed bananas, unsweetened applesauce, or plain yogurt. 

Espresso. Using brewed espresso, or strongly brewed coffee is entirely optional, but we do recommend it as enhances the overall chocolate flavor of your brownies. 

Vanilla extract. We recommend that you use vanilla extract, or imitation vanilla in this brownie recipe to help flavor them and make them taste delicious. 

Flour. Your basic all-purpose flour will work well for this dairy free brownie recipe. 

Cocoa powder. Cocoa powder will help to make your brownies chocolatey flavored as well.

You can use any type of cocoa powder, Dutch cocoa powder will make your brownies extra rich and chocolate flavored, or you can use your basic cocoa powder from the grocery store for a delicious chocolate flavor as well. 

Salt. Salt is included to help flavor your brownies and give them an all-around delicious taste. You can use kosher salt, sea salt, or iodized salt for this recipe.

How to Make Dairy Free Brownies

To make these delicious dairy free brownies, you want to begin first by melting your coconut oil and approximately 8 ounces of chocolate together.

You can melt this together in a small sauce pan over low heat, or by microwaving it in a microwave safe container, for 30 seconds at a time stirring it in between. Melt the chocolate and coconut mixture until it is liquified. 

Once the coconut and chocolate is melted, pour it into the mixing bowl, and let it rest for eight minutes so that the chocolate and coconut oil mixture has a chance to cool.  

Once cool, add your granulated sugar and brown sugar into the mixing bowl. Mix until combined. 

Next, mix in the eggs, or an egg substitute. Beat the mixture until it is combined. 

Now, into the mixing bowl add your brewed espresso, vanilla extract, flour, cocoa powder, and salt. Stir until combined. 

Finally, pour in the remaining chocolate chips, and stir the mixture just until they are combined. 

Lightly grease a 9 x 9 baking dish on both the bottom and the sides. Pour your brownie batter into the baking dish and add into the oven. Preheat the oven to 350°F. 

Bake your brownies for approximately 30 to 35 minutes or until they are done to your liking. 

Make sure that the brownies begin to pull away from the edge and a toothpick inserted into the center comes out clean. Remove them from the oven and allow them to cool before serving. Then enjoy! 

Tips and Tricks

Melt some chocolate. For the delicious gooey texture that makes these brownies taste amazing, and have chocolate flavor throughout, we recommend that you melt some of the chocolate with coconut oil before you begin making the brownies.

But we do recommend that you reserve approximately 1 cup of chocolate chips to be added hole. 

Cook until done but not burnt. It can be tricky to cook your brownies, so they are perfectly done. On average it takes between 30 and 35 minutes for your brownies to be nicely done.

However, this the cook time may vary depending upon your oven, and if you’re making a single or double batch of these brownies.

The best way to tell if your brownies are done, is to look for them to be pulling away from the edges of your pan, and when you insert a toothpick, it should come out mostly clean.

Serving Tips

Toppings. Although these dairy free brownies are delicious all by themselves, one of our favorite ways to serve these brownies is to add toppings to them.

Some of our favorite toppings include whipped cream, chocolate chips, chocolate sauce, or caramel syrup. You can also top these delicious brownies with some vanilla ice cream before serving. 

Using Vegan Butter or Oil in Brownies. For this recipe, we do recommend that you use melted coconut oil as a butter replacement.

However, you can also use oil or vegan butter as a substitute for normal dairy butter as well.

Make Ahead Brownies Without Milk or Butter

One of the great things about these dairy free brownies is that they can be made in advance if desired. We recommend that when you make them in advance, you allow them to cool to room temperature, and then transfer them to an airtight container. 

You can store them in a large chunk, or cut them into pieces before storing.

Depending upon your preference, you can store there take container at room temperature, or in the fridge. You can even freeze these brownies for longer storage if you want.

How to Store

At room temperature. We recommend that you allow these brownies to cool to room temperature, and then transfer them to an airtight container.

You can continue storing the brownies in an airtight container, at room temperature if desired. Depending upon your climate, they will usually last between three and five days at room temperature. 

In the fridge. You can also store you are dairy free brownies in the fridge if desired. Would you recommend that you allow them to cool, and then transfer them to irritate container.

Place the airtight container in the fridge for up to one week. 

How to Freeze

For a longer storage, these dairy free brownies can also be frozen if desired. First do you want to allow the brownies to cool to room temperature. Then once they have cooled, we recommend you cut them into serving sizes.

Then place each brownie into a freezer bag, or a few at a time into a freezer bag. Seal them in the freezer bag securely, label and date it, then place it into the freezer for up to three months. 

Variations

Gluten Free Option

To make a gluten-free variation of these dairy free brownies, you can easily do this simply by substituting regular all-purpose flour with a gluten-free version of all-purpose flour. 

Substituting Gluten Free Flour

There are many different flour options when it comes to gluten free diet. However, the best result when baking with gluten-free flour is simply to use an all-purpose flour that is gluten-free.

Bob’s Red Mill, or even Walmart has a great option for all purpose gluten-free flour. This typically turns out much better and is way easier than using a variety of flours to make baked goods that are gluten-free. 

Do use a gluten-free all-purpose flour for making dairy free brownies, you can simply follow the above recipe, then use a one to one substitute ratio for wheat all-purpose flour, and replace it with gluten-free all-purpose flour. 

Egg Free Option

Because the price of eggs is all over the place at the moment, and they can be difficult to find, you can make these dairy free brownies in a way that does not include eggs as well.

To make this recipe without eggs, we recommend replacing the three eggs with ¾ cup mashed bananas, ¾ cup unsweetened applesauce, or ¾ cup plain yogurt.

Baking at High Altitudes

If you are located at a high altitude, you may need to adjust the above recipe so that makes appropriately. Here are a few tips for adjustments made it when baking at different altitudes. 

Adjustment for 3000 feet

Sugar: for every cup of sugar, decrease the sugar by 1 tablespoon. 

Liquid: It might be a good idea to try and add one to 2 tablespoons of liquid for every one cup. 

Adjustment for 5000 feet

Sugar: decrease the sugar, for each cup decrease it by 2 tablespoons. 

Liquid: for each cup of liquid add 2 to 4 tablespoons additional.

Adjustment for 7000+ feet

Sugar: for every cup of sugar decrease the amount added by one to 3 tablespoons. 

Liquid: for every one cup of liquid add 3 to 4 additional tablespoons of liquid. 

Baking with Humidity

When you are baking at a location with a lot of humidity it’s important to keep in mind that this may impact the outcome of your baked goods. A few helpful tips are as follows:

Keep Ingredients in the fridge

Reduce the liquid added by 1/4th

Bake a little bit longer

The easiest solution when you are baking dairy free brownies and the location with high humidity, is to simply bake them for a little bit longer in the oven.

Then, we would you recommend that you store your dry ingredients in such as flour, cocoa powder, and sugar etc. in the fridge which will help protect it from picking up extra moisture. 

Flavor Variations & Add Ins

You can change up the flavor of your dairy free brownies simply by adding in other ingredients or swapping out your dairy free chocolate chips with another flavor of morsels. 

Some easy options include changing out your chocolate chips for peanut butter chips, butterscotch chips, white chocolate, or cream cheese chips. 

You can also add things like caramel syrup to your brownies before serving them, or add peppermint extract to your brownie batter before baking them for delicious flavor variations.
