Once they are ripe, those fresh blueberries are the perfect thing to make this tasty blueberry tart recipe with. If you don’t have access to fresh summer blueberries, don’t worry though. You can also use fresh blueberries from your grocery store, or even frozen blueberries if needed.

Simple Blueberry Tart Recipe

Special Equipment

There are a few kitchen gadgets that are a good idea to have on hand when making this tart recipe, but they are not required.

A Tart Pan

A tart pan is handy to have on hand when making this blueberry tart recipe. If you don’t have this specific pan, you could substitute a pie plate or springform pan. They are not the same, but they can work in a pinch.

Food Processor

I like to use a food processor to make my tart crust. If you do not have one, you can make it by hand using a pastry cutter or stand mixer.

Rolling Pin

If you are making the tart crust from scratch, you will want to have a rolling pin handy so that you can roll out the dough.

Blueberry Tart Ingredients

Fresh Blueberries

When selecting your blueberries, if you can use fresh blueberries, using fresh fruit the best option, but if you aren’t don’t sweat it. Frozen blueberries are just fine and will work well.

Granulated Sugar

Granulated sugar is the best type of sweetener to use for your blueberry pie filling. If you need to substitute it, you could use light brown sugar, which would give your pie filling more of a molasses texture. 

Corn Starch

Corn start is used in this recipe to help thicken your blueberry pie filling. If needed, you may substitute corn starch for all purpose flour to help thicken the filling.

Lemon Juice

A bit of lemon juice added to this tart filling will help add a bit of flavor profile. If you are using the juice of a fresh lemon, it is also a great idea to include a little bit of the lemon zest for additional flavor. Unlike some recipes, when you use lemon juice, in this recipe there is no need to also include vanilla extract. The lemon juice will add just the right amount of additional flavor to your blueberries.

Cinnamon

A little bit of ground cinnamon is also a tasty addition to your blueberry tart filling. 

Cold Butter

You will also want to have some cold butter on hand. The cold butter will be added to the blueberry tart and works best when the butter is cold, rather than at room temperature. I like to use salted butter, but you can also use unsalted butter if you prefer less salt content.

Egg Wash

To finish up your blueberry tart recipe, you will also want to have an egg wash. This helps to give the crust a lovely shiny texture and helps it to brown during the baking process. You can use 1 large egg, and 1 Tablespoon water whisked together for the egg wash.

Tart Crust Recipe

To make the tart crust, you can follow my tart crust recipe here, use a graham cracker crust, or purchase a premade crust. If you are looking for an easy crust solution, you can pick up store-bought crusts, add them to your tart pan, and bake them before adding your blueberry tart filling.

How to make a Homemade Blueberry Tart:

Step 1: Preheat Oven

Preheat your oven to 375°F

Step 2: Make the dough

While your oven is preheating it’s time to make the dough for the crust. Check out my recipe for the tart crust recipe for step-by-step instructions on how to make it. 

Step 3: Press the dough into the pan

Once your tart crust dough has been made, you will want to roll it out on a lightly floured surface, until it is thin. Then transfer it to your greased tart pan. 

Press the dough into the pan, so that the edges lay flat. Trim any excess dough that hangs over the top edges. 

Press dough edges so that the tart dough snuggly against the top of the pan. Use a fork and poke small holes in the bottom of the dough.

Cover the dough with parchment paper and add pie weights if you have them. These will help hold the crust in place as it bakes.

Step 4: Prebake the Tart Crust

Place the prepared tart crust in the oven and bake for approximately 15-20 minutes. Remove the parchment paper and pie weights, then bake for an additional 5 minutes. 

At this point, the tart crust should be mostly baked, but it’s okay it’s okay if it is a little underdone still. We will bake it one more time.

Step 5: Make the filling

Now, it’s time to prepare the blueberry filling. In a medium to large saucepan, add the cornstarch and granulated sugar. Toss until they are combined, and no lumps remain. 

Add blueberries and toss blueberries until they are covered in the mixture. 

Place the pan over medium heat.

Add lemon juice and stir occasionally. Keep a close eye on the mixture stirring often, so that it doesn’t burn.

When the mixture begins to bubble, turn the heat to low, add the cinnamon, and continue stirring for a few minutes. Stir until the mixture thickens. 

Once the blueberry filling has thickened, remove it from the heat.

Step 6: Fill the tart shell, and bake

Pour the prepared blueberry filling into the partly baked tart crust. Add the cubes of butter to the top of the tart, leaving space between them. 

Prepare the egg wash and brush it onto the crust.

Bake the prepared blueberry tart for approximately 10 minutes, or until the crust is a golden brown and the filling bubbles around the edge.

Remove it from the oven and allow it to cool.

Step 7: Finish the tart

Once the tart has cooled, you may choose to serve it warm or chill it in the fridge before serving. 

To serve, add a bit of whipped cream, or vanilla ice cream to each serving. Then serve and enjoy your delicious homemade blueberry tart!

How to Store a Blueberry Tart

At Room Temperature

You will want to leave the blueberry tart at room temperature until it has cooled. Then transfer it to an airtight container or cover it with plastic wrap before placing it in the fridge. 

In the Fridge

Once your tart has been prepared for the fridge, it may be stored in the fridge in an airtight container for up to three to four days. 

In the Freezer

If you happen to have leftovers that need to be frozen, you may freeze the blueberry tart. First place it in a freezer-safe container, then freeze it for up to three months.

Variations

In addition to making this recipe for a classic blueberry tart, you can also make a few different variations on this recipe. Let’s look at a couple of fun options. 

Mini Blueberry Tarts

What’s better than a classic blueberry tart? Mini blueberry tarts! You can use the same recipe to make mini blueberry tarts, all you will need are small tart pans or even muffin tins. 

Rustic Blueberry Tart

A rustic blueberry tart is the perfect solution if you don’t have a tart pan and are unsure what to do. This tart doesn’t require any pan! To make the rustic blueberry tart, you can use a tart crust or premade pie crust. 

Lay the crust flat on a lightly greased baking sheet. Then add your prepared blueberry filling to the center of the crust, leaving a few inches around the edge of the crust. 

Fold the crust up around the edge of the blueberries, so that they are partly covered, but the center is still open. 

Brush the top of the crust with the egg wash, then bake the blueberry tart at 375°F for approximately 20 to 30 minutes depending on your oven. You want to bake the rustic blueberry tart until the crust is a light golden brown color. 

Remove the rustic blueberry tart from the oven, and let it cool for a little while before serving.

Prebake the Tart Crust

When you are making this blueberry tart recipe, I highly recommend that you pre-bake the tart crust. This way it is thoroughly cooked, without any gooey places. 

Grease the Pan

It is also going to be a good idea to grease the pan that you are using, so that the tart doesn’t stick to it, and can be easily removed.

Tart Pans vs. Pie Plates

There is sometimes a bit of confusion when it comes to the difference between a tart pan, and a pie plate, so let’s clarify that here. A tart pan is a short pan, with a removable bottom, and a ruffled edge. A pie plate on the other hand is generally glass or metal, has a slanted edge, and is much deeper than a tart pan.
