Bisquick Baking Mix. One of the key ingredients to this recipe is a Bisquick baking mix. The box of Bisquick mix can still be powdered.

It doesn’t need to be combined with any other ingredients, but it should be the kind used to make pancakes, waffles, muffins, or biscuit mix. You also don’t have to use the name-brand mix, any type of baking mix like this will work as well.

Fresh Zucchini. You will also want to have approximately three medium-sized fresh zucchini to make this recipe. I do not recommend using frozen zucchini, you will have the best result when you use fresh.

Zucchini fresh from the grocery store or fresh from the garden works perfectly for this recipe. 

Shredded Cheese. You will also want to have some shredded cheese on hand to make this recipe. I recommend using freshly grated Parmesan cheese, for the best result.

However, some other great options include shredded cheddar cheese or shredded mozzarella cheese. It is a matter of your preference and what you have on hand as to what type of cheese you prefer to use.

Olive Oil. You will also want to use your favorite type of oil. Usually, olive oil is my preferred type of oil. However, canola oil and vegetable oil also work well for this recipe.

Onion. If only minced onion will give your casserole some delicious flavor. You don’t need a large onion, preferably a small yellow onion will work out well.

Eggs. I also recommend including eggs in this recipe for the best overall Bisquick zucchini casserole. You will want to use a few medium or large-sized eggs.

Milk. Whole milk or your favorite type of milk will help to moisten your batter.

Salt. Salt is great to season your casserole with. You can use seasoning salt or regular kosher or sea salt for this recipe. 

Garlic. I also recommend including some garlic powder, or a freshly minced garlic clove to season your casserole and add some delicious garlic flavor.

How to Make Zucchini Casserole Bisquick Recipe

First, preheat oven to 350°F.

Cut your zucchini into thin slices.

In your mixing bowl, combine all of the ingredients except for the zucchini slices. Mix until combined. Then fold in the zucchini slices.

Pour mixture into a square 9-inch pan, or casserole dish. Spread the zucchini mixture evenly in the pan. Place it into the 350 degree oven and bake for approximately 25 to 30 minutes or until it turns a light golden brown.

If your casserole needs to continue baking for a few more minutes, you can cover it with aluminum foil to prevent the top from burning.
