1 can Fire-roasted diced tomatoes, or 1 cup tomato sauce, or 4-6 Roma tomatoes
Olive oil or vegetable oil
1-2 dried Pasilla Negra or Pasilla Ancho Chile
4-5 garlic cloves
8 cups broth, stock or water
1 tsp Mexican oregano (optional)
Salt
Cooked Chicken
Garnishes for the top

We have adapted the above recipe, to make it slightly less spicy, and make the soup go further. We have also slightly changed the seasonings, to fit more of our preferences. Please feel free to season your soup as you wish. Everyone has different taste buds, so be sure to season according to your taste preferences. Copycat Qdoba Chicken Tortilla Soup Recipe

Ingredients

2-3 Tbsp vegetable oil (or 3 Tbsp butter)
2 medium onions, minced
4 small, sweet peppers, minced
5-6 cloves garlic, minced
1.25 oz chili seasoning mix
Cumin to taste
1 dash crushed red pepper seasoning
32 ounces chicken broth
28 ounce can crushed tomatoes
2-14.5 ounce cans diced tomatoes
3 cups cooked chicken, shredded (or use this Qdoba Chicken Recipe)

Toppings

Shredded Colby Jack cheese
Lime slice
Cilantro
Avocado slices
Corn chips
Sour cream

Instructions

Step 1

In the bottom of your soup pan, drizzle your olive oil, then add minced onions, peppers, and garlic. Sauté over medium heat for about 5 minutes or until onions become translucent in color. 

Step 2

Add in your seasonings, including, chili seasoning, cumin, red pepper seasoning, and any others you desire. Stir to combine. 

Step 3

Pour in chicken broth and stir so that no lumps remain from the seasonings. Turn heat to medium or medium-low.

Step 4

Add canned diced tomatoes, canned crushed tomatoes, and your chicken that has been cooked and shredded. Cook over medium-low heat stirring occasionally until your soup is warmed through. This will typically take about 20 minutes. 

Step 5

When you serve your soup, dish it into your serving bowls, then add your desired toppings before you serve and enjoy. 

Notes

If you want to make your soup a bit spicier you can substitute the sweet peppers for poblano peppers and, also add 3 tsp Jalapenos that are seeded and diced. 

Tips for Making the Best Chicken Tortilla Soup

Chicken. Making the best chicken tortilla soup, is quite simple and straightforward. However, if you are looking for basic chicken, that is moist to use in your soup, a great way to cook it ahead of time is to simply place it in a crockpot with your desired seasonings, in about ½ two ¾ cups of water. Cook the chicken for 6 to 8 hours or until the internal temperature reaches 165°F. Then shred the chicken before adding it to your soup. 

Tomatoes. This soup is really a tomato-based soup. Therefore, your tomatoes are key as to how your soup will turn out. Because it is easiest, we recommend using canned tomatoes. You can also use fresh, or frozen tomatoes if you prefer. For the best texture, we recommend using diced tomatoes paired with a can of crushed tomatoes. However, you may also choose to use diced tomatoes that are fire-roasted or diced tomatoes that also contain basil, garlic, and oregano. Either one of these will give you a bit of added spice to your soup making it delicious. 

Peppers. The types of peppers you use will determine how much heat the soup contains. If you are looking for a more mild soup, we recommend using green peppers, or sweet peppers. However, those of you that prefer a bit more of a kick in your soup may enjoy using Poblano peppers, mixed with a few jalapeños. You may also enjoy using dried Pasilla Negra or Pasilla Ancho Chile in place of our recommended sweet peppers if you prefer a bit of spice to your soup. No matter what you choose to use for your peppers in the soup, it will be delicious. As you prepare the soup, no matter what kind of peppers you use, they will be added to the soup when you are sautéing the onions.

Once your soup has completely cooled off, you can transfer the soup to a freezer-safe storage container that is airtight, or a freezer storage bag. Be sure to label and date your bag before placing it in the freezer. The soup can be frozen for up to three months. When you are ready to use it, you can allow it to thaw overnight in the refrigerator then warm in a saucepan on the stove over medium-low heat. You can also try removing it directly from the freezer and placing it into a saucepan to warm up. If you choose to do this, be sure to cook over low heat so that it does not burn.

  1. Looks good, but it’s missing the tortillas. My friend worked at Qdoba for a couple of years and told me the secret to their tortilla soup is letting some corn tortillas cook gently in the broth, and then adding it all to a blender, tortillas and all, and pureeing (don’t add the tortillas cold or else it’ll end up gritty). It will create just the right taste and texture. Sounds weird, but I gave it a go after trying other copycat recipes and it not being the right flavor or texture, so texted her and she told me the tortilla trick, and it was perfect!
