Spicy Baked Feta And Red Pepper Dip

1. Preheat oven to 350F. In a medium sauté pan, heat the olive oil over medium heat, 3 to 5 minutes. When the oil has warmed, add the chopped shallot and minced garlic and cook until soft and aromatic, approximately 5 more minutes. Stir in the all purpose flour and remove from heat.

2. Meanwhile, mash the Greek yogurt and feta together with the back of a fork to make a lumpy paste. (Plain yogurt can be substituted for Greek yogurt, but if substituted do not add the milk.) Stir in the milk. Next, mix in the olive oil, shallot and garlic mixture, followed by the diced red bell pepper; mix very well to combine and spread into a baking dish that is also suitable for serving. Bake for 45 minutes, until lightly browned on top and bubbly around the edges.
