Instructions:
Bring a large pot, filled with water and two teaspoons of salt to boil.

Heat the olive oil in a sauté pan over high heat. When it’s hot, add the peeled and cubed sweet potatoes. Season them lightly with salt and pepper. Cook, stirring occasionally, until they become slightly tender, 10 minutes.

When the water begins to boil, add the pasta and stir. Cook, stirring occasionally, until the ravioli are heated all the way through. With a slotted spoon, take the ravioli out of the pot, draining them on the way and set them aside in a bowl.

Pour 1/2 cup of the pasta water into the sauté pan with the sweet potatoes. Simmer, adding a little more pasta water if needed, until the sweet potatoes are tender, 3 minutes.

Combine the ravioli with the sweet potatoes. Gently mix in the mascarpone. Sprinkle with parsley and serve.
