No Bake Cookie Dough Bites

No bake cookie dough bites are made with protein cookie dough, that are filled with protein powder, and are also keto friendly, vegan friendly, and gluten-free. If you’re looking for a delicious snack that fits your diet needs, this recipe is definitely for you!

Now, let’s look at what you will need in order to make these cookie dough bites.

Ingredients and Substitutions

Protein Powder. We recommend using a vanilla flavored powder to help add a lovely hint of vanilla flavor to your protein cookie dough. Although you can use any kind of powder, it is a matter of preference, we would recommend that you do not use Whey powder if you wish to achieve the best overall flavor and texture of your dough.

Please note that if you are simply looking to make edible cookie dough, and do not care as much about the protein powder, you can replace all or part of the powder with almond flour, or coconut flour if desired.

Peanut Butter. For a smooth texture to your dough, we recommend using creamy nut butter for this recipe. You can use any kind of nut butter or brand of nut butter for this recipe that you prefer.

Maple Syrup. For the sweetener, the most common sweetener to use is maple syrup. This is great because it fits many dietary needs. However, if you’re looking for a substitute or a lower-cost alternative sweetener you can also use honey, agave nectar, and brown sugar to replace the maple syrup in this recipe.

Milk. We recommend using a little bit of your favorite kind of milk to smooth out this cookie dough and make it creamy. You can use your favorite type of milk for this recipe.

Chocolate Chips. Chocolate chips are optional, we recommend including them in your mixture for a delicious hint of chocolate. Our favorites are mini chocolate chips, or dark chocolate chips to include in this cookie dough.

How to Make Protein Cookie Dough

In a mixing bowl combine your protein powder and peanut butter. Mix them together until combined.

Add maple syrup or your desired sweetener, and a little bit of milk to help smooth out your cookie dough. Stir until combined.

Add chocolate chips and mix just until combined. Serve right away, or place them into an airtight container and refrigerate until you are ready to serve. Then serve chilled.

How to Serve Cookie Dough

We enjoy this cookie dough best after it has chilled for a couple of hours, however, this is completely a matter of personal preference.

To serve your protein cookie dough, it can be enjoyed using a spoon and dipping it out of a serving dish, or you can roll your dough into balls and freeze them. Or simply enjoy chilled cookie dough balls. Get creative and see which way you enjoy your cookie dough the best.

Tips to make the Best Protein Cookie Dough Balls

How to Thicken Cookie Dough. Make sure that your cookie dough is the right consistency. You want your cookie dough to be able to form balls, and hold that shape, but not too dry. Feel free to add additional powder, or additional milk to your edible protein cookie dough to make it into your desired consistency.

Chill. For the best overall flavor, we enjoy chilling our cookie dough protein bars in the refrigerator for a little while before eating. This makes them have a nice flavor and texture.

Make Without Protein Powder or Half Powder. If desired, you can also make your cookie dough with less powder and add your favorite editable raw flour such as almond or coconut flour to the mixture. This allows you to decrease the protein powder included in the cookie dough protein powder balls, but still have the same great taste and consistency to your mixture.

Storage and Freezing

Room Temperature. Once you’ve prepared your healthy cookie dough bites, they should not be left at room temperature any longer than two hours. After that, your dough should be transferred to an airtight container, or sealed inside a plastic storage bag and then refrigerated.

Refrigerator. Prepared no bake cookie dough balls should be transferred to an airtight container, or sealed into a plastic storage bag, and placed in the refrigerator at 40°F or below for up to seven days.

Freezer. Editable protein cookie dough can also be frozen for longer storage, and for the simple enjoyment of eating frozen cookie dough if you wish.

To freeze your cookie dough, first, roll it into balls, then place the balls on a cookie sheet. Allow them to freeze for one to two hours, or just until solid. Once they are frozen, transfer your cookie dough balls to an airtight container, or seal them in a plastic freezer bag. Freeze at 0°F for one to three months for best results
