Making flourless cookies doesn’t have to be complicated. These cookies are some of my favorite cookies to make, and they are a great option when you are in the mood for a sweet treat. 

Another great thing about these oatmeal cookies made without flour is that they make delicious gluten-free oatmeal cookies. Since oats are naturally gluten-free, you will just want to make sure you check the processing of your oats, so that they are made in a facility without gluten, especially if you are looking for a flourless cookie recipe due to food allergy reasons.

Key Ingredients in Flourless Oatmeal Cookies:

Rolled Oats

Rolled oats are sometimes referred to as old fashioned oats. Basically, you want the kind that is not quick oats. Meaning that they are whole oats.

Baking Soda

Baking soda is what will help your cookies rise. This is a very important ingredient to include. 

Salt

I used basic iodized salt, but you may use sea salt as a great alternative if you wish. 

Cinnamon

A little bit of cinnamon will help flavor your delicious cookies and give them a little more full-bodied flavor. 

Butter

I used regular salted butter, but you may choose to use unsalted. Just remember that it has less salt content, so you may need to add a pinch more to compensate. 

Eggs

On the other hand, those of you who stick with processed peanut butter, don’t have to press the cookies before baking them. They will likely flatten out naturally during the baking process.

No matter what kind of peanut butter you are using, you will want to make sure to stir the peanut butter thoroughly before adding it to your mixing bowl. This way the oils will be mixed back in the peanut butter like they should be before you add it to your baking mixture.

When selecting your oats to use in these delicious oatmeal cookies, you might be confused as to which ones to choose. There are so many options, from quick oats, instant oats, quick-cookie oats, rolled oats, or old-fashioned oats.

The best options for this recipe are going to be the type of oats that are labeled rolled oats, or old-fashioned oats, you will want to skip the quick versions for this recipe, and instead use oats that contain the whole oat. 

What if I’m Gluten-Free?

If you have gluten-free concerns, you will want to make sure to look for certified gluten-free oats. Although oats are naturally gluten-free, some may be processed in facilities that also deal with foods containing gluten. 

This will be of great concern to you if you have celiac disease, or if you are trying to adhere to a gluten-free diet for other reasons. 

How to Make Oatmeal Cookies without Flour

Step 1: Gather the Ingredients

Before you begin making my delicious oatmeal cookie recipe without flour, you will want to gather all of the ingredients, and make sure you have everything you need. 

Step 2: Mix Ingredients

In a large mixing bowl, add the dry ingredients, and mix for a few seconds until combined. Next, add the wet ingredients to the mixing bowl.

After all of the ingredients have been added, mix thoroughly until the cookie dough is combined. Feel free to add your favorite mix-ins such as chocolate chips, raisins, or anything else you love.

Step 3: Shape Cookies

Next, you will need to shape the cookie dough into small round balls. I like to use a small cookie scoop to speed up the process. If you don’t have one, roll the balls into equal-sized balls, approximately one inch in diameter.

Prepare the cookie sheet, by lining it with parchment paper if you are able. If not, grease your cookie sheet with cooking spray. 

Preheat the oven to 375°F. 

Place the cookie dough balls onto the cookie sheet, leaving plenty of space in between the balls. 

Bake for approximately 8-10 minutes, if you like them a little gooey in the center. Or 10-12 minutes if you prefer them a little more done. I like to bake them until the cookies just begin to turn a golden brown around the edges.

Once the cookies are baked to your liking, remove them from the oven.

Step 5: Cool Off

Set the hot cookie sheet on your stovetop, or a hot pad for a few minutes (about 2-4 minutes) so that the cookies can cool off enough for them to be moved. Place the warm cookies on a wire rack at room temperature and allow them a few minutes to finish cooling off.

Step 6: Eat Them!

When they are cooled to your preference, it is now time to enjoy eating your tasty oatmeal cookies without flour!
