It creates such light and fluffy pancakes, in just a few minutes, that are so full of pumpkin and spice flavors that are delicious. Kick them up a notch by adding some of your favorite add-ins or creating gourmet toppings that add give that added visual appeal. You might be wondering what kind of pancake mix to use for these delicious pancakes. And our answer is any complete pancake mix will do. If you’re not sure that the pancake mix is a complete mix, the best clue is that it will say “just add water”. If you’ve found one with just add water then you’re all set.

You can use Krusteaz Complete pancake mix, Hungry Jack Complete pancake mix, or any brand that you like. It doesn’t only have to be Krusteaz. Our favorite tends to be Hungry Jack because it makes pancakes that melt in your mouth and are so light and fluffy. Seriously, they’re like wow, fluffy. And it takes literally no effort to achieve that fluffiness.

Cooking The Pancakes

The best way to cook the pancakes is to achieve a perfectly golden-brown exterior while the inside is nice and fluffy and light. Following our ingredient list and step by step instructions will help you do that.

If you’re using a griddle or frying pan for cooking, you’ll want to be sure that the pan has been greased well with oil to keep the pancakes from sticking.

Do I need to buy pumpkin pie spice?

No. If you’re using canned pumpkin pie puree you don’t need to buy pumpkin pie spice because it’s already included in the pumpkin. If your canned pumpkin is plain pumpkin puree, then you’ll want to add pumpkin pie spice to give it good flavor.

What if I can’t find canned pumpkin?

If you can’t find canned pumpkin, then you still have a couple of options. You can buy and cook a pie pumpkin and scoop that out for use in your pancakes. Please note there is a difference between pie pumpkins and pumpkins that are used for carving. Pie pumpkins are much smaller in size and typically have a smoother, darker skin.

Sometimes it can be challenging to find pumpkin pie spice at the store. We’ve been there. And if you can’t find it in the spice section, you might be surprised that you might already have the spices in your cupboard to make pumpkin pie spice. Here’s how:

3 tablespoons ground cinnamon
2 teaspoons ground ginger
2 teaspoons ground nutmeg
1 ½ teaspoons ground allspice
1 ½ teaspoons ground cloves

Mix these spices together and add 2 teaspoons to the ¾ cup of plain pumpkin puree. The leftover pumpkin pie spice can be stored in an airtight container in your cupboard for future use.

If you’re using pumpkin pie puree for your pancake recipe, then it already has pumpkin pie spice added and you don’t need to worry about making it or adding it yourself. You’ll only need to add this if you’re using plain pumpkin puree.

Gluten Free. To make this recipe gluten free, use a gluten free complete pancake mix. All other ingredients (water and pumpkin puree) are naturally gluten free.

Pumpkin. Though our recipe calls for pumpkin pie mix in a can. You can use any kind of pumpkin puree or even substitute butternut squash. We talk more about that in the frequently asked questions. If you’re using pumpkin that is not spiced, we recommend adding pumpkin pie spice for delicious flavor.

Pancake Mix. Krusteaz has a great complete pancake mix that works well. But if you’ve got another favorite brand laying around, why not use that? You’ll know it’s a complete pancake mix if it says “just add water”.

4-Ingredient Pumpkin Pancakes With Pancake Mix

If you’re not able to find a can of pumpkin pie mix, then your three ingredient recipe will likely turn into a four ingredient recipe. You’ll either want to find pumpkin puree and add the two teaspoons of pumpkin pie spice to the mix.

How To Make Pumpkin Pancakes

These easy pumpkin pancakes can be made with any complete pancake mix, pumpkin pie mix, and water. Just mix the ingredients and fry them in oil. It doesn’t get any easier than that. And they come out so light and fluffy.

Ingredients

1 cup Complete pancake mix (just add water)
¾ cup Water
¾ cup Pumpkin pie puree
Oil for cooking

Instructions

  1. Heat griddle to 375F degrees. Spread oil to keep surface from sticking.
  2. Mix pancake mix, water, and pumpkin pie puree until smooth and slightly runny.
