Korean Shrimp Pancakes

Try these delicious Korean Shrimp Pancakes, they are perfect for breakfast, a light lunch or even an appetizer. This recipe will give you a new take on classic pancakes. 

The key to making the perfect golden, crispy pancakes is to have your pan hot and batter cold. Try turning your pan on to warm up before you are ready to use it, or make sure your batter is as cold as possible, or both. Give these pancakes a try and let us know what you think. 

This recipe makes about 8 pancakes.

You Will Need:

Shrimp
Scallions
Flour
Salt
Sugar
Baking powder
Milk
Eggs
Butter
Oil

How To:

Rinse shrimp and scallions and pat dry. Let them dry completely. Cut into small pieces and put into a bowl.

In a new bowl combine flour, sugar, salt, baking powder, milk, eggs and melted butter. Once all ingredients are in, mix together until there are no more lumps. Add in the shrimp and scallions. Gently mix together.

Heat the large skillet with about 3 tablespoons of oil, while batter rests. Once warm, scoop about 1/4 to 1/2 cup batter into skillet. When batter becomes solid around the edges, check bottom to make sure it is golden. Once golden, flip and cook the other side throughly.

Serve while hot and enjoy!
