Grated Carrot and Celeriac Salad

Grated celeriac and carrot salad
serves 2-4

Ingredients:
1 celery root, peeled and coarsely grated
2 medium carrots, peeled and coarsely grated
2 tablespoons mayonnaise
1 tablespoon lemon juice
1/2 teaspoon kosher salt

Grated Carrot and Celeriac Salad

Instructions:
Prepare the celery root by rinsing it with water and cutting off the excess portions. Rinse the carrots and peel with a vegetable peeler. Using a box grater, grate both the celeriac and carrot into a large bowl. Add the remaining ingredients and stir to combine. Enjoy!
