This Carrot Mint Salad is so simple and easy to make. It is a favorite at our house, especially at the last minute, because it can be prepared very quickly. The tang of the vinegar, brightness of the mint and crunch of the carrots are an ideal balance for rich braised or roasted meats. Add a few currants or dried cranberries for a surprising sweet note. 

Nothing says spring time like carrots. And the nice thing about carrots is that they are available year round. It doesn’t have to be just a spring time dish. Also, you can shred them or thinly slice them for a nice variety for each time this dish is prepared. Fresh mint or parsley is easy to find for an added and welcome contrast in the color presentation.

Shopping List
apple cider vinegar
olive oil
kosher salt
freshly ground black pepper
carrots
chopped fresh mint

Equipment
large bowl
whisk

Carrot Mint Salad

Whisk together the vinegar, olive oil, salt and pepper in a large mixing bowl until they’re combined. Add the carrots to the oil base and mix until well covered. Add the mint. Add salt and pepper to taste. Enjoy Carrot Mint Salad!
