Dark chocolate covered walnuts are so easy to make; they literally take 10 minutes to whip up. And they are the perfect combination of nutty, salty and sweet flavors. Imagine those gourmet candy store chocolate covered nuts. Well, chocolate covered walnuts are quite pricy at the gourmet shop, but you can make them at home for much less. We’re going to show you how.

At our house, dark chocolate is considered healthy if consumed in moderation. Research has shown it is proven to help with heart health, so it must be healthy, right? That’s even more reason to make this delicious snack. And dark chocolate covered walnuts are low-carb and gluten free.

When we were growing up, my parents planted two Carpathian English Walnut Trees in our yard. They were beautiful. We loved watching them grow over the years. And like many bearing trees, they had branches that were low to the ground, so we deemed them our climbing trees. They were perfect for that. I remember fondly watching the walnuts begin to grow on the trees each spring and then mature throughout the summer. Finally, they would fall off in the fall, leaving their skins behind and attached to the tree branches. Then, we’d go collect them and take them inside for the winter. I remember winter days, cracking and shelling walnuts in our basement near the space heater, together as a family. Those are sweet memories.

The walnuts produced from these trees were extra special, not only because they grew in our yard, but they were the extra fancy ones like you find in the grocery store fruit baskets at Christmastime. Their shells were smooth, light in color and the nuts were crispy and perfectly nutty in flavor, not too bitter or chewy like some varieties. As a result of watching these trees grow and helping to harvest our crop each year, we became very fond of the taste of walnuts, having them readily available for use in the kitchen most any time.

For us, making and sampling (trust me, you can’t resist) chocolate covered walnuts is the best possible way they can be prepared and eaten. Here’s how to do it:

Ingredients:

1 cup dark chocolate chips
1 pound walnut halves
1 tbsp heavy cream (optional)

Instructions:

1. Place 1 cup of dark chocolate chips in a microwave safe bowl. Microwave for 1 minute.

2. Remove and stir chocolate chips until smooth.

3. Add 1 tbsp of heavy cream (optional) as a smoothing agent. Heavy cream can be substituted with coconut oil, butter or milk. It can also be omitted completely.

4. Prepare a parchment lined baking sheet. Dip the walnut halves into the chocolate and lay them on the parchment lined baking sheet to cool.

5. Once all the dipping has been completed, move the baking sheet to the freezer for at least 15 minutes to cool.

6. And as always, enjoy! Go ahead and try one. You’re gonna love them!

Optional Add-Ins:

We like making our chocolate covered walnuts just plain. But if you’re the kind of person who likes to try new things, here are some possible add ins you might enjoy trying:

Sweetened coconut – sprinkle on the outside before cooling

Sea salt – sprinkle before cooling

Coco powder – dip before cooling

Cinnamon – sprinkle on the outside

Powdered sugar –sprinkle on the outside

Sprinkles – sprinkle before cooling Peanut butter – dip in peanut butter before chocolate
