A couple of ingredients that make these oatmeal cookies unique are that if desired they can include golden raisins or apricots.

Starbucks Oatmeal Cookie Recipe

Directions

Preheat your oven to 375°F

In a mixing bowl, combine butter that has been slightly softened, brown sugar, and granulated sugar. Mix until it becomes creamy. 

Add eggs, vanilla, baking powder, baking soda, cinnamon, sea salt, and milk. Stir until combined. 

Add flour and oatmeal and mix just until it is combined. Try to not stir any longer than is needed to completely mix. 

Add raisins, golden raisins, craisins, and apricots if desired. Stir just until it is mixed in. 

If you have a cookie scoop, take that, and scoop your cookie dough onto a lightly greased pan. If you do not have a cookie scoop, roll portions of dough into balls that are about one inch in diameter. Place balls evenly spaced on a lightly greased cookie sheet. 

Depending on your cookie preference, will determine how long you should bake your cookie dough. If you prefer more gooey cookies, then bake them for about eight or nine minutes. If you prefer cookies that are more golden, then try for eleven to twelve minutes of baking. 

Once you remove your cookies from the oven, allow the cookies to sit on the cookie sheet for about five minutes before you try to remove them and place them on a wire rack or dish towel to finish cooling. You may choose to serve while still warm or after they have been cooled. 

Store your delicious cookies in an airtight container so that they do not dry out. You may also refrigerate the cookies if desired as well as freeze them for up to three months. Your cookies will last the best if stored in a sealed airtight container and will remain fresh the longest that way too. 

Gluten-Free Recipe Variation 

One of the great things about these Copycat Starbucks Oatmeal Cookie Recipe is that they can be easily adapted to fit dietary needs such as gluten-free. To make these cookies gluten-free, simply substitute out the all-purpose flour, for gluten-free all-purpose flour. I have used brands such as King Arthur or Bob’s Red Mill all-purpose gluten-free flour, to make these and have had great success. The other item that you will want to substitute is oatmeal, be sure to use oatmeal that is gluten-free and has not been processed in a plant where they also make gluten items. A simple one-for-one substitution should work alright for these cookies for both the flour and the oatmeal. If your batter looks dry, you can try adding some additional milk to make it moist again.
