Chicken Tostada Salad 

Chicken tostada salad is a perfect dinner for when you are in a hurry or looking for something on the healthy side or are in the mood for a taste of Mexican.  
 
Honestly, it’s so hard to go wrong with this delicious salad. This recipe is a great go-to recipe when you are looking for dinner on the go or at any time.

Classic Tostada Salad 

Details 

Yield: 2 Salads 

Ingredients 

2 boneless skinless chicken thighs or breasts 

1 Tbsp olive oil 

½ tsp garlic salt 

1 head Romaine lettuce, rinsed and chopped 

1 medium Roma tomato, diced 

1/3 cup shredded cheese 

2 Tbsp sour cream 

1 avocado, sliced 

2 large tortilla shells 

Instructions 

Step 1: Cook Chicken 

Begin by cooking or grilling your chicken. First, cut your chicken into small cubes, toss them with a drizzle of olive oil and garlic salt, then cook or grill your chicken until it reaches an internal temperature of 165°F. Remove from the heat.  

Step 2: Prepare Salad Fixings 

Next, cut your lettuce, tomatoes, and avocados. Set aside until ready to use.   

Step 3: Tortilla Shell 

Then, take a skillet and drizzle it lightly with olive oil, place it over medium-low heat. Add your tortilla shell and warm for approximately 30 seconds or until the tortilla shell begins to bubble.  
 
Flip to the other side and repeat the process. Then place your tortilla shell into a lightly greased oven-safe dish. Bake your tortilla shell at 400°F for approximately 5 to 8 minutes or until it is lightly golden. Remove from the oven. 

Step 4: Assemble 

Now it’s time to assemble your salad. Remove your tortilla shell from the baking dish and add your lettuce, chicken, tomatoes, shredded cheese, sour cream, avocados, and any additional ingredients you desire. Serve right away, and enjoy!

Please note that there are many different ingredients you may include if desired. These are the basic ingredients that we recommend including when making this copycat recipe. As always, you are welcome to get creative and add your own flair to the dish.

Tips and Tricks 

Tip #1 

If desired, your tortilla shells may be prepared in advance. We recommend preparing it before you begin so that it has time to cool, or you can prepare as needed. You will not want to prepare those days in advance as they can get soggy.  

Tip #2 

Get creative and add your favorite ingredients to the salad. Ingredients such as black beans, or corn are great additions. Think about what you like to enjoy, then add them to the salad!  

Storage Tips 

Room Temp: We highly recommend the salad be kept at room temperature for no more than two hours. Food that is stored at room temperature for any longer than two hours runs a high risk of growing bacteria and giving you food poisoning.  
 
If you are in a warmer climate, you’ll want to be careful of this especially, as the time may even decrease.  

Fridge: The best storage method for any leftover salad is to store it in your refrigerator. To do this, you will want to transfer your salad into an airtight container, then place it in the refrigerator for up to three days.  
 
Please note that your salad is likely to keep well, however, we do not recommend storing your tortilla shell as it is likely to become soggy. Please also note that if you have any dressing in your salad it is likely to not keep well and should be eaten the day it is made.
