How To Make Our Casserole:

The process of making our casserole is quite easy. To begin, you will want to cook your ground beef and prepare your rice. Once both are prepared, set aside.

To assemble your casserole using cooked ingredients, add your rice to an 8 x 8 casserole dish first. Then add a layer of black beans. Follow that layer with canned corn, then add a layer of ground beef. Top the casserole off with a layer of diced sweet peppers and diced tomatoes. Sprinkle freshly grated cheese on the top before baking. 

Bake at 400°F for about 15 minutes, or until the casserole is warmed through, and the top teams begins to turn a golden brown color. Served when fresh from the oven. Top your servings with a dollop of sour cream, and a scoop of fresh guacamole. Add your favorite tortilla chips for additional goodness. Serve and enjoy!

Ingredients

5.4 oz taco rice, prepared (or Mexican rice)
15 oz canned black beans, rinsed and drained
15 oz canned corn, drained
½ pound cooked ground beef, ground turkey, ground pork or chicken will also work
2 tsp taco seasoning, or as desired
1 clove garlic, minced
3 mini sweet peppers, diced
2 small Roma tomatoes, diced
¾ cup Mexican style cheese
Cilantro, as desired
Sour cream
Guacamole
Tortilla chips  

Preparation

Step 1: Rice

Make your rice according to package instructions. Set aside.

Step 2: Ground Beef

Brown your ground beef (or meat of your choice) until it is fully cooked. Add taco seasoning and minced garlic. Stir to combine, then set aside. 

Step 3: Preheat Oven

Preheat your oven to 400°F

Step 4: Assemble Casserole

Begin your casserole by starting with an 8 x 8 pan that has been greased. Add your first layer of prepared rice, then add your black beans that have been rinsed and drained. Next, add your canned corn that has been drained. Your next layer will be your ground beef mixed with taco seasoning and garlic. Then spread your mini sweet peppers and Roma tomatoes over the top. Sprinkle on some shredded cheese of your choice, and top with some dried cilantro flakes. Bake for 15-20 minutes, or until the cheese is melted, and your casserole is warmed all the way through. 

Step 5: Serve

When you serve this, top with a dollop of sour cream and fresh guacamole serve with your favorite tortilla chips. Serve while hot and enjoy!

How Long Does It Last?

When stored in the refrigerator, any leftover casserole should be okay to eat for up to three days after preparing it. If you have any leftovers after three days, we recommend that you throw any remaining leftovers out.
