How to Make Moe’s Chicken?

Before you begin cooking, we will start off by marinating the chicken. To do this you will need thawed chicken that is cut into bite-size pieces. Then, add your check into a plastic bag that seals, and mix with olive oil, minced garlic, red pepper flakes, and lime juice. Allow your chicken to marinate 4-6 hours.

Before you’re ready to cook, pour the entire chicken mixture into a skillet, and cook over medium-low heat until the chicken reaches an internal temperature of 165°F. 

Rinse and drain your black beans, then add to the chicken mixture after your chicken has fully cooked. Allow the beans to warm over low heat, so that you don’t overcook your chicken, but warm the beans.

In a clean skillet, drizzle with olive oil, and turn your heat to low. When warm, add one tortilla shell and sprinkle shredded cheese on top. Let the tortilla warm only until your cheese is melted. Then assemble your burrito by adding a layer of chicken and beans along with salsa and cilantro. Serve and enjoy.

Method of Preparing the Moe’s Mojo Chicken Step by Step:

Step 1: Marinate Chicken 

First, take your chicken and cut into bite-sized pieces. Then add it to a plastic bag, along with your garlic, olive oil, red pepper flakes, and lime juice. Place it in the refrigerator and allow it to marinate for 4-6 hours.

Step 2: Cook the Chicken 

After your chicken has marinated for several hours, add the entire mixture to a skillet, and cook over medium-low heat until the internal temperature of your chicken reaches 165°F. Add black beans that have been rinsed and drained, and allowed to warm. 

Step 3: Assemble

In a fresh pan, drizzle olive oil, and place over low heat. Add your tortilla shell, and top with shredded cheese. Allow the tortilla to warm over low heat until your cheese is melted. Remove from the heat, and layer with chicken and bean mixture, salsa, cilantro, guacamole, and other optional ingredients. 

Step 4: When Ready to Serve

Roll your assembled tortilla into a burrito, and if you desire wrap in aluminum foil or parchment paper. Serve with salsa, sour cream, and guacamole if you wish. Serve while warm and enjoy.

If desired, you can also sauté your onions, green peppers in a separate pan, or allow them to heat at the same time that you added green beans. How you prepare your burrito with the optional ingredients is up to you. If you choose to make Mexican rice, you will want to make that in a separate pan, then assemble with the burrito.
