How To Make Carrabba’s Chicken Parmesan

To begin making your copycat Carrabba’s Chicken Parmesan, start by gathering the following ingredients. Then, get your taste buds into gear so that they are ready to go! 


4 boneless and skinless chicken breasts

Egg wash

4 large eggs
½ cup milk

Bread Crumbs

1 cup bread crumbs
1 tsp Italian seasoning 

Flour Coating

1 cup flour
¼ tsp salt
¼ tsp pepper
½ tsp garlic
½ tsp Italian seasoning
1 cup vegetable oil, for frying
24 oz jar marinara sauce
½ cup parmesan cheese, for topping
¼ cup mozzarella cheese, for topping


Step 1

Gather all your ingredients, then in individual bowls create an egg wash, breadcrumbs, and flour coating mixture and mix well. If necessary, cut and trim your chicken, then use a meat mallet to hammer out the chicken. You want them to be about 1 inch to 1 ½ inch thick. Pour your oil into a deep skillet and heat, but do not let the oil get any hotter than 350°F


Step 2

Now that all of your different pieces are prepared, begin by taking your first piece of chicken and dipping it in the egg mixture. Dip both sides. 

Step 3

Move on to the flour mixture, then repeat dipping the chicken in the eggs and flour again. Now that your piece of chicken has had two coats of each, place it into the breadcrumbs and roll it so that the entire piece of chicken is covered in breadcrumbs. Now you are ready to dip it into the oil. Place your piece of raw breaded chicken into the vegetable oil and cook on each side until golden.

Preheat oven to 375°F.

Spray baking dish with cooking spray. Once the chicken has been browned, place your browned, but still raw pieces of chicken into the baking dish. Repeat, egg wash, flour mixture, and breadcrumb process with all pieces of chicken. 

Step 6

Once complete, and all pieces of chicken are now in the baking dish, top with marinara sauce, mozzarella, and parmesan cheese. Bake for an additional 10-15 minutes uncovered, or until your internal temperature of the chicken reaches 165°F, and cheese has started to turn golden around the edges. 

Step 7

Remove from the oven, top with parsley or basil and serve while hot. Enjoy!

If you prefer, you may cook the chicken completely by frying it in the vegetable oil. However, if you do this, you will need to warm up your marinara sauce on the stovetop as well or place the chicken, covered in marinara sauce and topped with cheese on low broil, until cheese is melted and sauce is warm.

To make this you will need to sauté in olive oil, 3 cloves minced garlic, and one onion. Then add in about eight tomatoes that have been diced and skins removed. Simmer with 1 sprig of basil, ½ tsp oregano, 1 tsp salt, ½ tsp sugar, and a tiny pinch of red pepper flakes. Simmer over medium-low heat until sauce breaks down and cooks. Stir vigorously, and serve.

There are two main ways to store your leftovers, in the fridge or in the freezer. Any leftovers should be kept in the fridge after they have been securely sealed and should not be kept any longer than three days in the refrigerator.

There are two ways you can freeze this dish. Both should be kept in an airtight container or a sealable plastic bag in the freezer. 

Freeze chicken parm: Chicken Parmesan can be frozen after it has been completely prepared. It is best when stored in an airtight container, and frozen for no more than three months. When ready to thaw, place in your refrigerator overnight, then bake at 375°F until warm all the way through. If the outside is cooking faster than the inside, cover with foil and bake. 

Freeze chicken cutlets: The other way to freeze this dish is to prepare the chicken as far as browning it in a pan. Before you bake with marinara sauce and cheese, and place it in an airtight container and freeze. To thaw, place in the fridge overnight and allow it to thaw out. Bake at 375°F, until thawed.
