Recipe | Step by Step Walk Through

This recipe is based on a serving size of four pieces of meat. Please adapt accordingly for more or less chicken that is desired. Please note this is our copycat recipe for Southern Classic Chicken, and not the recipe they actuially use at the restruant.

Recipe Ingredients:

4 Chicken legs, thighs, or breasts with bone in and skin on
2 cups Milk
1 tsp Farm dust seasoning (or garlic salt)
1 tsp garlic powder
4 eggs, whisked
2 cups flour
Dash parsley
½ tsp salt or to taste
¼ tsp pepper or to taste
½ tsp garlic powder
¾ tsp farm dust (or garlic salt)
Vegetable oil for frying (about 4-5 cups if using a smaller pan)

Warning:

Be extremely attentive to the temperature of your frying oil. If it gets too hot, it will burst into flames. You will want your temperature for vegetable oil to remain around 350°F. If your oil does get out of control, remove your pan from the burner. If by chance your oil does catch on fire, put it out using baking soda or salt, do not attempt to use water. Use a fire extinguisher if the fire is large and as a last resort. Learn more about the smoke point of oil HERE.

Directions:

At least an hour before, place your chicken, milk, farm dust, and garlic powder in a bowl to marinate. Allow to sit for one hour or overnight.

Begin cooking by pouring your vegetable oil into a deep pan, and turn your burner to low heat. Insert a thermometer to keep an eye on your oil’s temperature. You are aiming to cook your chicken at 350°F.

In a bowl crack then whisk eggs until combined.

In a separate bowl, add flour, parsley, salt, pepper, garlic powder, and farm dust. Mix to combine.

Now, remove your chicken from the milk mixture, and dip it into the egg mixture and turn it so that it is completely coated. Next, dip your piece of chicken into the flour and gently spoon the flour so that the chicken is completely covered. Take that same piece of chicken and dip it back in the eggs and then back in the flour. You want each piece of chicken to be coated in egg and flour two times apiece.

After it is covered the second time, you can now place it in your heated oil. Cook in oil that is at 350°F, until the internal temperature of your chicken reaches at least 165°F.

Remove your chicken from the oil and place it on a plate lined with a paper towel. Allow to sit for a few minutes until the extra oil drips off. Serve while hot and enjoy!

Tips

There are three very important steps that you need to be sure to not overlook in this recipe. Follow these and you will end up with delicious fried chicken that can rival Southern Classic’s Chicken!

Oil Temperature. Be sure to monitor the temperature of your frying oil at all times. You need it to maintain a temperature as close to 350°F as you can get. If you see the temperature spike up, remove the oil from your burner right away to avoid encountering the oil’s smoke point. Maintaining a temperature of 350°F will also allow your chicken to cook evenly and not get overly done on the outside, but still, have your chicken raw on the inside.

Double Dip. By double-dipping your chicken in egg and flour respectively, you have a better outcome in the fried texture of your chicken. One coat of each just does not do as good of a job.

Temperature. Before determining that your chicken is done cooking, be sure to use a meat thermometer to check your chicken’s internal temperature. Your thermometer must read at least 165°F in order for your chicken to be safe to eat. It is a good practice to check the temperature in a few different locations so that you can be sure the piece of chicken has been sufficiently cooked throughout the inside.
