Salmon Noodle Soup

Chicken noodle soup is the go to soup when you don’t feel well. Have you ever given Salmon Noodle Soup a try? This soup also makes a delicious meal for when you aren’t feeling well. It also makes for a great soup for a lovely spring evening.

To make this soup from scratch is a very simple process. It also does not take very long to make, so if you are in a time crunch, try this for dinner. 

This recipe serves between 2 to 4 people. 

You Will Need:

Fish stock
Carrots
Stalk of celery
Onions
Potatoes
Fresh salmon fillets
Cooked pasta
Olive oil
Salt
Pepper

How To:

Heat the fish stock in a large soup pot over medium-high heat.

In a pan of boiling water, add noodles and a drop of oil. Boil noodles until they are soft. Remove from heat and drain all of the water out.

Over medium heat, place fish stock in a large soup pot.

In a medium fry pan, warm olive oil and add in carrots, celery, onions and potatoes. Cook until vegetables are soft.

Once cooked, add contents of fry pan to the fish stock. Bring to a boil and cook for about 10 minutes.

In clean fry pan, heat up more olive oil and place salmon fillets. Cook skin side down for a few minutes and then flip and cook the rest of the way.

Remove from heat once cooked. Take off the fish skin and cut salmon into small pieces.

Add Salmon and noodles into broth mixture. Add salt and pepper to taste. Boil for 5 minutes.
