Instructions:
Prepare the ingredients by thinly slicing the onion, mincing the garlic, and chopping the cilantro. Season the beef generously with salt and pepper. Heat the oil in a large sauté pan over medium heat. When it’s hot, add the onions and season with a generous sprinkling of salt and pepper. Cook the onions until they are soft, 5 minutes.

Stir in the garlic and cook 1 minute. Add the other spices: ground fennel and cumin, and cook until the spices become fragrant, 2 minutes.

Place the beef, sweet potatoes and broth in the pan. Stir to combine the ingredients. Cover and bring to a simmer. Turn down the heat if you need to. Gently simmer until the sweet potatoes are tender and the beef is cooked through, 20 minutes.

When the beef finished cooking and the sweet potatoes are done, turn the heat off, but leave the pan on the burner and stir in the yogurt until it heats through, 2 minutes. Stir in the cilantro and season to taste with salt and pepper.

  • ½ cup chopped fresh cilantro
