Instructions:

Place beans in a bowl and cover by 2 to 3 inches in water. Remove any beans the float when you add water. Allow them to soak over night, or for 8 hours. After the beans have finished soaking, drain the water.

Once the beans have been soaked, place them in a large pot and cover with 2 inches of water. Add turkey, carrots, sage and peppercorn. Cover and simmer the beans, checking them every 30 minutes. The cooking time of the beans can depend on your beans and how fresh they are. It may take anywhere from 30 minutes to 2 hours for the beans to fully cook. **Don’t let the beans cook over a rolling boil, try to keep them to a light simmer so that they don’t begin to fall apart.

While your beans are cooking, prepare 2 cups of rice according to package instructions.

Once your beans have cooked for 1 hour, add salt and mix in. You may desire more salt or less depending upon your preferences.

When the beans are ready, remove turkey thigh and wing from the bean mixture. They should now be fully cooked. Peel the meat from the bone. Serve rice and beans with turkey on top. If desired, drizzle with olive oil before serving.
