Of course, as always you can mix things up, such as the beauty of making your own homemade food, and add any desired ingredients that you like, or skip other ingredients that you don’t like. 

Cheesy Chicken Fajita Casserole

Not only can you enjoy this easy chicken fajita casserole that is quick to make, and delightful to enjoy because of the taste and lack of mess it makes in the kitchen, but also because you can make it deliciously cheesy as well. 

You can make it as cheesy as you wish, but our favorite is to include mozzarella cheese on top. You could also get creative and add a bit of pepper jack cheese for a bit of a kick, or even Parmesan cheese. The best thing is the ability to customize this casserole to be just the way you like it.

The Easiest Ever Way to Make Chicken Fajitas

Recipe Ingredients

Chicken breasts

Minced garlic 

Green peppers

Red peppers

Yellow peppers

Onion

Seasoning salt

Mozzarella cheese

Cilantro 

Cream of chicken soup (or cream of mushroom or cream cheese will also work) 

Fajita Seasoning

Garlic powder

Onion powder

Paprika

Cumin

Sugar

Chili powder

Pepper

How to Make Chicken Fajita Casserole

First, prepare your chicken breasts. Make sure they’re fully thawed, and remove any excess fat. Place them into in lightly greased cast-iron skillet or casserole dish, and add approximately ½ cup of water, and minced garlic. 

Place the casserole dish into the oven and preheat the oven to 350°F. Bake your chicken in the oven until it reaches an internal temperature of 165°F. 

Tip: for a shorter cooking time, cut your chicken into small pieces and it will cook much faster. 

While your chicken is cooking, prepare your green peppers and onions. When your chicken comes to temp, remove it from the oven, and shred the chicken. 

Crank up the oven temperature, and add your sliced peppers and onions. Bake until they become caramelized. 

Add your fajita seasoning, cream of chicken soup, and stir to combine. Top with shredded cheese, and place back into the oven at 425°F. Bake until your cheese is melty and beginning to turn brown in some areas. 

Remove from the oven, add cilantro if desired, then serve and enjoy!

Tips for the Best Fajitas

Use a Cast Iron Skillet. I recommend that you use a cast iron skillet or pan that can go in your oven. If you don’t have a cast-iron skillet you can use a casserole dish instead. 

Vegetables. We recommend you bake your vegetables uncovered, just until they are soft. This allows them to get done without the cheese becoming too done.

Then when your vegetables are cooked, combine with your seasonings, can of cream of chicken soup, or cream cheese, and combine your ingredients before it topping with shredded cheese. 

Fajita Seasoning. You can make your own fajita seasoning if desired, or you can purchase a package of fajita seasoning. Please note that fajita seasoning is slightly different from taco seasoning, therefore you may not want to interchange the two. 

Variations

Make with Cooked Chicken! 

A great way to speed up this recipe is to use pre-cooked chicken for making your chicken fajita casserole. This allows you to completely skip the step of making your chicken in the oven. Simply shred your chicken, and add your peppers and onions.

Then bake according to the instructions above. This allows you to significantly cut the amount of time it takes to prepare your chicken fajita casserole.

Keto Chicken Fajita Casserole

Make this chicken fajita casserole into a keto friendly recipe, simply replace the cream of chicken soup with sour cream and cream cheese, using approximately one cup of sour cream, and about one block of cream cheese (8 oz).

Otherwise, you can prepare this recipe as instructed and enjoy a lovely keto friendly meal.

One of the great things about chicken fajita casserole is that pretty much makes a whole meal in one casserole. However, there are other recipes you can make to enjoy alongside this casserole. Below are a few of our favorite side dishes. 

Make-Ahead

One of the great things about this chicken fajita casserole recipe is that it can be made ahead of time if you wish. To make chicken fajita casserole ahead of time you can simply follow the steps. 

  • Prepare your chicken as instructed above. This means that it will be baked until the internal temperature of your chicken reaches at least 165°F. Remove from the oven and shred your chicken.
  • Add your peppers and onions to the casserole dish and bake them until soft. 
  • Remove your dish from the oven, and add cream of chicken soup and fajita seasonings. Stir until your ingredients are combined. 
  • Allow the casserole to cool to room temperature.
  • Top with shredded cheese, and cover your dish with a lid or with plastic wrap. Refrigerate for up to three days.
  • When you are ready to eat the casserole, please it into your oven, then preheat your oven to 350°F. Bake your casserole until your cheese is nice and melted. Then top with cilantro if desired then serve and enjoy! 

How to Store and Reheat Leftovers

Storage

Room Temperature. Your chicken fajita casserole, no matter if cooked or raw should be left at room temperature for no more than two hours if the temperature is between 40°F and 90°F. If the temperature is warmer than 90°F, then do not leave your chicken fajita casserole at room temperature for any longer than one hour. 

Fridge. Your chicken fajita casserole may be stored in the fridge if desired. Store in the fridge after your casserole has been sealed in an airtight container, covered in plastic wrap, or transferred to a plastic storage bag. Then refrigerate for up to three days at 40°F or below.

Freezer. We do not recommend freezing your chicken fajita casserole after it has been baked. However, if you want to prepare the casserole and then freeze it, after your chicken has cooked, but with raw peppers and onions, your casserole may be frozen if sealed in an airtight container, or plastic freezer bag for up to one month.

Reheating Leftovers

Microwave. The most common way to reheat leftovers is using a microwave. Transfer a serving size to a microwave safe dish, cover with a damp paper towel, and microwave for one to two minutes or until warm. 

Oven. You can also warm your entire casserole by reheating it in the oven. To do this, allow your casserole dish to warm then placed in the oven and preheat your oven to 350°F. Bake until your casserole is warmed through. 

Stovetop. You could also reheat portions of your chicken fajita casserole on the stove top if needed. To do this, place it into a skillet with a couple of tablespoons of water, and heat over medium low heat in a covered skillet until warm.

No, you do not have to use a cast iron skillet for this recipe if you do not have one. Or perhaps you want to make a larger casserole than will fit in your cast iron skillet. You can also use a casserole dish, or 9 x 13 baking dish for this recipe as well. Simply be sure to make enough to fill your dish.

The most common fajita vegetables are peppers and onions. However, if you want you can also include beans, corn, tomatoes, and other peppers as well. You can get creative and add your favorite vegetables to this dish.
