Growing up I thought it was funny when my Grandma would tell us stories about eating fried dandelions or dandelion greens. I was always a bit unsure about it though. This Dandelion Pear Blue Cheese and Walnut Salad recipe will change your mind if you are on the fence about dandelion greens.
While dandelion greens might not be a very common food, they can be enjoyed if mixed into the right combination of foods. This slightly bitter taste mixes well with the richness of the blue cheese and the sweetness of the pears. Give this a try and let us know what you think!
What you will need:
Rinse and pat dry the pears. Cut them in half and remove the core. Slice the pear halves into cubes. Add to a large bowl.
Rinse and dry the dandelion greens. Chop into bite sized pieces. Add to bowl with pears.
Add walnuts, blue cheese, onion and bacon bits as desired into bowl with pears. Gently toss until mixture is combined.
To make dressing in a small bowl, combine vinegar, oil, salt and pepper to taste. Whisk until mixed together completely.
Drizzle dressing over greens and pear mixture. Gently toss until well coated. Serve and enjoy!
