Instructions:
To prepare this, simply wash baby carrots and pat dry. Place 2 Tbsp peanut butter into a small bowl and serve on a plate with carrots.
NOTE: This recipe is also great when adding raisins, celery, or apple slices. Each of these can be prepared ahead of time and stored in the fridge if desired, with the exception of apple slices. If you wish to serve with apple slices, these slices should be cut right before you intend to serve them. By cutting apple slices in advance, they will turn brown.
Carrot Peanut Butter Recipe:
½ cup peanut butter
1 cup carrots
Instructions:
To make carrot peanut butter, begin by boiling carrots. In a small sauce pan, place 1 cup of carrots and enough water so that they are completely covered. Cook over medium – high heat until they begin to boil. Turn the heat down to medium and continue at a rolling boil. Allow carrots to boil until carrots begin to get soft, but not mushy. This should take between 5 to 10 minutes of being at a rolling boil.
In a food processor, add your cooked carrots and peanut butter. Pulse until combined. Remove and serve. This can be used as a dip, or even to make a peanut butter sandwich. Get creative in how you enjoy eating it the best.
Carrots With Peanut Butter Cream Cheese Dip:
½ cup peanut butter
1 ½ Tbsp cream cheese
1 Tbsp honey
Milk as needed
Carrot sticks
Instructions:
To make carrots with peanut butter cream cheese dip, start off with the dip. In a mixing bowl combine peanut butter and cream cheese. Whisk on high with a mixer until it is combined, and mixture is fluffy. Drizzle in honey and a little milk if you would like your dip to be a thinner consistency. Whisk until combined. Place in a small bowl and serve with carrot sticks for dipping.
