This recipe will walk you through the process of making a copycat version of Dunkin’ Donuts’ cheddar cheese bagel twist.

Its cheddar cheese bagel twist is just like a bagel, only it is in a twisted form, and topped with shredded cheddar cheese. This is a delicious bread, that you just can’t go wrong with. 

Recommended Equipment

Stand mixer

Mixing bowls

Dutch oven or large pot

Ingredients

Starter

1 cup warm water

1 Tbsp active dry yeast

1 tsp granulated sugar

Dough

1 Tbsp olive oil

1 ½ Tbsp brown sugar, packed

3 cups bread flour

2 tsp salt

Water Bath

8 cups water

¼ cup honey

Egg Wash

1 large egg

1 Tbsp water

Topping and Finishing Up

1 cup shredded cheddar cheese

Instructions

Make the Starter

Begin by making your starter. In your mixing bowl, combine water, active dry yeast, and sugar. Stir until the yeast is dissolved in water, then allowed to say for 8 to 10 minutes, or until it begins to form. 

Bagel Twist Dough

Next, stir in brown sugar and oil. Using a dough hook on your mixer, add flour and salt. Gently sprinkle into your mixture while you stir until your flour is completely mixed into your mixture.

Your dough should be sticky and pulling away from the outsides of your mixer. If it does not pull away from the edge of your mixture, sprinkle a little bit more flour into it and stir. 

Knead your dough using your mixer’s dough hook for 4 to 5 minutes. If your mixer can’t handle it, roll it out onto a lightly floured surface and knead your dough by hand. 

Lightly oil a clean mixing bowl, and cover with a damp cloth. Place into a warm dry location until your dough rises and is doubled in size. This should take between one and two hours. 

After your dough has risen, gently divide it into approximately six balls. Take each ball and use your thumb to gently create a center opening. Then carefully make the opening wider and twist your bagels into the twisted bagel shape. Lay your bagel twists on a lightly greased baking sheet, cover with a towel, and allow to rise. 

Preheat your oven to 425°F. 

Prepare the Water Bath

In a large Dutch oven, or large pot, add your water and honey then stir and place over medium-high heat. Bring your mixture to a rolling boil. Boil each bagel 45 to 60 seconds on each side, then remove from the water. Place the boiled bagel twist back on the baking sheet. 

Brush & Bake

After all of the bagels have been boiled, brush the top with the egg wash, and top with shredded cheese. 

Bake in your oven at 425°F for approximately 20 minutes. Remove from the oven, serve, and enjoy once cooled. 

Notes

Cheddar cheese bagel twists can also be made in a bagel shape if desired. Simply leave the hole small and your dough in a rounded shape. These bagels may also be finished off with other toppings if desired. Simply add your toppings after your egg wash has been brushed on top.
