Our blueberry muffin shots are adorable, and I am so excited to share this easy and delicious treat with you! These muffin shots are made by combining two mini blueberry muffins with cream cheese filling in a shot glass and topping them with a blueberry. The cute treats are perfect for any occasion and will make a fun addition to any gathering.

Deliciously Easy Blueberry Muffin Shots

There are several different ways that you can make blueberry muffin shots. From making blueberry muffins entirely from scratch, in several different ways, to making alcoholic beverages taste like blueberry muffins. While we will give a summary of each of these ways at the bottom of this article, we are first going to focus on my favorite way to make blueberry muffin shots. I love these cute little blueberry muffin shots and hope you will enjoy them as well! Without any delay, let’s jump right into how to make these adorable mini blueberry muffin shots. 

Ingredients For Blueberry Muffin Shots

To make super easy blueberry muffin shots you will need the following ingredients. 

Boxed blueberry muffin mix, prepared as instructed on the box
Cream cheese 
Butter
Vanilla extract
Powdered sugar
Salt
Fresh or frozen blueberries
Grape jelly

How To Make Blueberry Muffin Shots

My favorite, easy way to make blueberry muffin shots is to use a baker’s corner box blueberry muffin mix. I prepare it as stated on the box, and put the batter into mini muffin tins. Bake them for 10 minutes, then allow them to cool. 

While the muffins are cooling, make your cream cheese filling. To make this filling, whip together a block of cream cheese, and one stick of room temperature butter. Once these are soft and fluffy, add vanilla and salt. Finally, add powdered sugar to the mixture and whisk to combine. 

To assemble these blueberry muffin shots, remove the papers from the muffins, then place one mini muffin into a shot glass and layer with cream cheese filling, add another mini muffin on top, and top with cream cheese filling, a blueberry, and a drizzle of grape jelly if desired. 

Store these delicious blueberry muffin shots in the fridge until you are ready to enjoy. Serve and enjoy!

Tips For Making The Best Muffins

You will get the best blueberry muffins when you are careful to not over mix your batter. When you are mixing the muffin batter, be sure to mix each time, only until your ingredients are combined. I have found it helpful, to mix muffin batter by hand, instead of using a mixer.

Blueberry Muffin Shots Recipe

Equipment

Mixing bowl
Rubber spatula
Shot glasses
Mini muffin pans
Mixer
Whisk attachment for your mixer
Piping bag, or plastic bag with the corner cut out

Preparation

Before you begin, allow your butter to come to room temperature, and your cream cheese to soften up. Then gather all your ingredients. 

Ingredients

Muffins 

1 box bakers corner blueberry muffin mix
2 eggs
¼ cup vegetable oil
3/4 cup water
OR 1 boxed blueberry muffins prepared according to the box instructions 

Cream Cheese Filling

8 oz cream cheese, softened
1 stick butter, at room temperature
1 tsp vanilla extract
¼ tsp salt
4 ½ cups powdered sugar

Topping

½ cup grape jelly
18 blueberries, fresh or frozen

Instructions

Blueberry Muffins

STEP 1: Mix The Batter

To make your blueberry mini muffins, mix all of your ingredients together, except for the blueberries. Mix just until there are no lumps remaining. 

STEP 2: Fold In Blueberries

Before adding blueberries, be sure to rinse them well, and allow them to drain. Add them to your mixture, and carefully fold them into the batter. Be careful to not mix too much, or your batter will turn purple.

STEP 3: Spoon Batter Into Muffin Cups

Once your mixture is combined, prepare your mini muffin pan. Place mini muffin liners in each cup, then spray lightly with cooking spray. Scoop batter into each cup, so that it is ¾ full. 

STEP 4: Bake Muffins 

Preheat your oven, as directed on the box mix. In this case, we want the oven to preheat to 425°F. Place your filled muffin pan into the oven and bake for 9-11 minutes. Remove from the oven and allow the muffins to cool. While they are cooling, prepare your cream cheese filling. 

Cream Cheese Filling

STEP 1: Cream Butter and Cream Cheese

In a mixing bowl, add your block of cream cheese, and room temperature butter. Whip on high until mixture turns creamy. 

STEP 2: Whip Remaining

Add in vanilla, salt, and powdered sugar. Whisk on medium-low until combined. Place frosting into a piping bag or plastic bag with the corner cut out. Now it is time to assemble. 

Assemble

After your muffins are cooled, and your cream cheese filling is prepared, you can begin assembling your blueberry muffin shots. Remove the papers from your blueberry muffins and place one at the bottom of each shot glass. 

On top of the first muffin, add a layer of cream cheese. On top of the cream cheese add one more mini blueberry muffin. Top with more cream cheese filling. Then add one blueberry on top of each and drizzle with grape jelly. Serve or place in the fridge to chill. Serve and enjoy! 

Notes

If you would like more layers, you can even try cutting your mini muffins in half, across the top and bottom. This will let you have more layers in your shot glass.

The blueberry muffin box mix contains about 36 mini muffins, that equal out to serving sizes of 1 ¼ Tbsp powdered mix. We estimate that each mini muffin contains 58.33 calories. How To Make Tall Muffin Tops:

There are a couple of tricks to making tall muffin tops. The first trick is to not beat your batter too much. The second is to be sure your muffins are fully baked. And finally, the third is to be sure your box muffin mix or your leavening ingredients are not expired. Sometimes if your baking soda or baking powder are close to their expiration date, they will no longer work. This means that your muffins will not rise properly. However, if you are sure these three things are good, your muffins should not have any problem in gaining tall tops as they cook.

There are a few different ways to reheat your blueberry muffins before they are assembled into your shots. Once they are assembled you will not want to reheat the muffins. Blueberry muffins may be microwaved for 10 seconds at a time, or even placed in the oven on warm for a few moments.

There are two main ways to serve these delightful blueberry muffin shots. The first is layered in a shot glass. The second is to assemble two muffins, with cream cheese filling layers, with a toothpick down the center. Using a toothpick works great if you do not have access to shot glasses. However, shot glasses help to add that extra elegance to their appearance.

I have shared my favorite way, which includes making a mini blueberry muffin and layering it with a special cream cheese mixture in a shot glass. If you are a baker that enjoys making things entirely from scratch, then this recipe is for you. We are going to look at a recipe to make the blueberry muffin portion entirely from scratch. 

Blueberry Muffin

Many boxed blueberry muffins are delicious, but occasionally they just need to be made from scratch. There are a ton of recipes available to make blueberry muffins, however, they often don’t turn out right. This recipe makes delicious blueberry muffins that will make you taste all the good things in life. To make your own from scratch, you will need the following ingredients. 

Blueberry Muffin Ingredients

1 cup butter, room temperature
4 large eggs
2 cups sugar
1 cup milk
4 cups flour
4 tsp baking powder
1 tsp salt
1 Tbsp vanilla 
5 cups fresh or frozen blueberries, rinsed and dried
4 Tbsp raw sugar (to top muffins)

How To Make Blueberry Muffin

Preheat your oven to 375°F

In a mixing bowl, cream your butter. Add eggs and sugar and beat together. 

Next, add the following ingredients, but do not mix until they are all in the mixing bowl. Add milk, flour, baking powder, salt, and vanilla. Mix together. 

Once your batter is mixed so that no lumps remain, fold your blueberries in by hand. Fold only until blueberries are combined. Do not overmix, as your batter will turn purple. 

Prepare your muffin pan by adding papers if desired and spraying it with cooking spray. Scoop your batter into the pan so that they are ¾ full of batter. Sprinkle the top with raw sugar if desired. Bake for 9-12 minutes if making mini muffins. Allow your muffins to cool. 

The Best Gluten-Free Blueberry Muffins

Using the above blueberry muffin recipe, we are going to adapt it to be a delicious gluten-free blueberry muffin recipe. Take a look at the additional ingredients you will need below. 

Ingredients You’ll Need

To make gluten-free blueberry muffins you will need, lemon juice, whole-milk yogurt, and all-purpose gluten-free flour.

How to Make Gluten-Free Blueberry Muffins

You are going to prepare the gluten-free version of these blueberry muffins as instructed in the regular blueberry muffin recipe. However, instead of using regular all-purpose flour, you will need to use your favorite brand of gluten-free all-purpose flour. You will also want to add in 2 Tbsp of lemon juice and 2 cups whole milk, full fat yogurt. Otherwise, prepare as instructed above. If you are not able to find this yogurt, you may use full fat, mayonnaise in its place.

How To Make The Batter

To make the batter, simply prepare it as stated above. However, once your batter is made, and placed into your mini muffin pans, do not bake your muffins yet. Continue reading before baking, in order to make delicious blueberry cream cheese muffins. 

How To Get Sky High Muffin Tops

To make your blueberry muffins have sky-high tops, be careful to not over mix your batter. Simply mix, just enough so that your ingredients are combined well, then stop mixing. Then fold in your blueberries, just so that they are mixed. Be sure your muffins bake completely but are not overdone. Then also be sure to check your baking powder, so that it is not expired. Once expired, it will not work nearly as well.

8 oz cream cheese, softened
¾ cup powdered sugar
1 tsp vanilla extract

How To Make the Cream Cheese Filling

To make your cream cheese filling, simply whip your cream cheese until it is creamy in texture. Then add in powdered sugar and vanilla. Mix to combine. Scoop your cream cheese filling on top of your prepared muffin pan. Swirl with a toothpick or knife, to mix cream cheese into your blueberry muffin batter. Bake as instructed under your blueberry muffin recipe. 

Storage and Make-Ahead Instructions

Blueberry cream cheese muffins should be kept in the fridge until you are ready to enjoy. Once they are assembled into your muffin shots, they should also remain in the fridge unless they are being served. These muffins may be made ahead and stored in the fridge if desired. 

Vegan Blueberry Muffins (Healthy + Easy)

To make our blueberry muffin recipe that is adapted to be vegan friendly, there are a couple of ingredients and quantities that will need to be substituted or exchanged. Please see the list below for details. 

Vegan Blueberry Muffin Ingredients

1 cup butter, room temperature 2/3 cup olive oil
4 large eggs
2 cups cane sugar
1 cup milk 2 cups almond milk
4 cups flour
5 tsp baking powder
½ tsp mineral salt
2 tsp vanilla 
4 cups fresh or frozen blueberries, rinsed and dried

How To Make Vegan Blueberry Muffins

To make these vegan blueberry muffins, simply combine all of the ingredients, except for the blueberries in a large mixing bowl. Mix to combine. Then fold in blueberries, until combined. Bake according to the instructions above.

To make this drink you are going to need a combination of fresh blueberries, sugar, berry juice, vanilla vodka, and lemon rum or vodka. Blueberry Muffin Drink Recipe Instructions

Pour ½ cup blueberries and 2 tsp sugar into your cocktail shaker and allow to sit for 5 minutes. Then fill the shaker with ice. Next add 2 oz berry juice, 6 oz vanilla vodka, and 2 oz lemon rum or vodka. Vigorously shake for a minute. Strain your mixture into a pitcher, then pour into shot glasses. Serve right away for the best flavor. 

Blueberry Pancake Martini

To make a blueberry pancake martini, you will need 2 oz blueberry vodka, 1 ½ oz Frangelico liqueur, 1 ½ oz butterscotch schnapps, blueberries, and ice cubes. Now, how to make this drink.

Yes, you may use either fresh or frozen blueberries for these muffin shots. 

Are Blueberry Muffins Healthy?

While they are not exactly healthy, they are better for you than other things that might satisfy your cravings. 

Why aren’t my muffins rising?

The main reason why your muffins might not rise is that your leavening agent, such as baking powder or baking soda is expired or is close to its expiration date. Try using some new leavening agent and see what a difference it can make. 

Why are my muffins dry?

There are a few factors that can make muffins turn out dry. First, butter and oil are a great combination to help your muffins turn out moist and have delicious flavoring. Second, be careful to not overmix your batter. A good rule of thumb is to not mix your batter more than twelve times. Finally, be careful to not overbake your muffins.
