How to Make Vegan Greek Yogurt at Home
1 ¼ cup raw whole cashews
2 cans coconut milk
1/3 cup tapioca starch
3 capsules probiotics
1. Soak cashews in water overnight and drain.
2. Add cashews, coconut milk, tapioca starch to blender or food processor and blend until nice and smooth.
3. Transfer to a pot and let simmer. Remove from the heat and let cool.
4. Transfer mixture to a glass bowl (don’t use metal). Add probiotics after cool.
5. Cover, allow to ferment on counter for 12 -36 hours until desired tanginess is achieved. Transfer to the refrigerator and store in an airtight container.
