Making Your Own Ice Cream Cake
Now, let’s turn our attention to how you can make your own amazing Ben & Jerry’s ice cream cake from scratch. This can be fun to do, so don’t fret, we will walk you through the step-by-step process of how you can easily do this at home.
How To Make Ice Cream Cake
9-inch springform pan
What You’ll Need:
Prepared chocolate chip cookie dough or brownie batter
Whipped Cream Topping
Hot fudge or chocolate syrup
Cookies or brownie chunks
What To Do:
Bake your base…
Begin by preparing your chocolate chip cookie dough or brownie batter, whichever you prefer to use (only one is needed). Once prepared, line the bottom of your pan with parchment paper, grease your springform pan, and add your raw dough. Bake until your cookies or brownies are done to your liking. Remove from the oven and allow to fully cool. We would even recommend placing it into your refrigerator and chill.
Add Ice Cream…
After your cookies or brownies have chilled, remove them from the refrigerator, and cover with your desired ice cream. Pat your ice cream down using parchment paper, or plastic wrap so that your ice cream forms a solid topping of your brownie or cookie. Set plastic wrap directly on your ice cream, and freeze. We recommend allowing your ice cream to freeze inside of your pan for at least two hours, or until it is solid.
Freeze The Ice Cream…
While your ice cream is freezing, prepare your whipped cream. We recommend using whipped topping to decorate your cake, however, if desired, frosting may be used instead.
Make Whipped Cream…
To make your whipped cream, add your heavy cream to a mixing bowl, and whisk on high until stiff peaks form. Add 1/3 to ½ cup of powdered sugar, and whisk until combined. Add 1 tsp vanilla extract and mix in. Refrigerate until your ice cream is set and you are ready to decorate.
Remove From Pan…
Once your ice cream layer is solid, remove from the freezer and then carefully remove your springform pan from around the edges of your cake. Now you can decorate your cake.
To decorate your cake, cover the outside of your cake with your whipped topping. Add fudge, chocolate syrup, caramel, cookies, brownie chunks, cherries, and sprinkles as desired. Feel free to get creative and decorate your cake any way you want. Be sure to freeze your cake until you are ready to serve it, then serve and enjoy.
Please note that you may want to allow your cake to thaw slightly before you serve. This will allow you to cut the cake better. Otherwise, it can be very difficult to cut.
Homemade Ice Cream Cake
Now that your creative juices are flowing, it’s time, to begin making your delicious creation. Below is our recipe to guide you, however, please feel free as always to get creative and add your own twist to the recipe. You can use your favorite chocolate chip cookie recipe, however, please note the brownies may be used as your base instead if desired.
Homemade Ben & Jerry’s Ice Cream Cake
48 oz Ice Cream, Cookie Dough is what we used, but please use your favorite
Chocolate Chip Cookie Dough
Whipped Cream Topping
1-pint heavy cream
1/3 cup powdered sugar
1 tsp vanilla extract
Hot fudge or chocolate syrup
Cookies or brownie chunks
Before you begin, you will want to fully prepare your chocolate chip cookie dough (or brownie batter). Then, once prepared, line the bottom of your springform pan with parchment paper, and lightly grease the bottom and edges with cooking spray.
Add your dough to the bottom of the pan and press down to form one large cookie. Preheat your oven to 375°F and bake until the center of a cookie is no longer doughy. Remove and allow to cool to room temperature, then refrigerate to chill.
After your cookie base has chilled, remove it from the fridge, and add your ice cream. Pack your ice cream onto the top of your cookie using parchment paper, or plastic wrap to press it solid.
Make it so that your ice cream is at least 1 inch thick. After the ice cream has been pressed into place, set it into the freezer and allow to freeze for approximately two hours, or until solid.
While your ice cream is freezing, prepare your whipped cream. To do this, pour your whipped cream into a mixing bowl and beat with a whisk on high until stiff peaks form. Add powdered sugar and whisk to combine, then add vanilla and mix in. Refrigerate until you are ready to use.
When your ice cream is frozen solid, it’s time to decorate your cake. Begin by removing the edge of your springform pan, then take your prepared whipped cream and add it to the top and the side of your cake. Next, as desired decorate your cake using chocolate syrup, caramel sauce, whipped cream, cookies, Maraschino cherries, and sprinkles.
Place the cake into the freezer until you are ready to serve. Shortly before serving, remove from the freezer and allow to thaw for a few minutes then serve and enjoy.
Homemade Ice Cream Cake Tips
Tip 1: Line Your Pan
One of the most helpful things you can do when making this ice cream cake is to line the bottom of your pan with parchment paper before adding your cookie dough, or brownie batter and baking it. This will help you be able to remove your cookie or a brownie from the pan easily.
Tip 2: Chill, Freeze, Freeze
It is extremely important to follow the above steps to chill your cookie after it has been baked before adding your ice cream on top of it. If you skip the step, your ice cream is just going to melt and you’ll end up with a mess.
After your ice cream has been added to the cookie, it is important to freeze it until solid before decorating your cake. If you skip this step your ice cream is going to be soft and your cake will not turn out well.
Then, before serving allow your whole cake to freeze, or store in the freezer until you are ready to use.
Tip 3: Decorate
We suggest decorating your cake with a base of whipped cream, and then any other decorations you may desire. You can also use buttercream frosting instead of whipped cream if desired. Feel free to get creative with the step and decorate your cake in any way you wish.
