Are you craving something beefy and stewy? Mashed Potato Stroganoff is a go to comfort food recipe that can be made on the stovetop in under 30 minutes. Your people are sure to ask for it again and again. Stroganoff is a dish of Russian origin, made popular by stewing strips of beef in a sauce fortified with sour cream. It’s been repurposed and adapted so many times over that we know it today as a quick stew with mushrooms and onions.

Mashed Potato Stroganoff With Beef is one of the dishes my kids ask for on a weekly basis, sometimes more often. No matter the occasion or time of year they like eating it. I think it’s because mashed potatoes are some of their favorite, it’s comfort food and is so delicious. Mashed potato stroganoff with beef is our tested, perfected and made-up variation of Hamburger Helper Potato Stroganoff. And the great thing is it’s just as easy and the homemade version is healthier too.

Variations for Mashed Potato Stroganoff With Beef

There are some variations to the mashed potato stroganoff with beef easy recipe.

Cream Sauce Variation

In our tutorial and in the recipe below we give you the easiest of the easy versions by using a can of cream of mushroom soup to act as the gravy agent. However, this item can be homemade and still maintain its easy status by using these ingredients:

Homemade Gravy
2 cloves Garlic, finely chopped
2 tbsp All-purpose flour
1 cup mushrooms sliced
1 ¼ cups Beef broth or stock
¼ cup Dry White Wine
2 tsp Worcestershire sauce
½ cup Sour cream

After sautéing onions and mushrooms in butter, add the flour to the pan and cook for 1 minute. Whisk in the white wine, stock and Worcestershire sauce and bring the liquid up to a bubble. Return the mushrooms and steak to the pan and simmer until the sauce has thickened, 5 to 7 minutes. Remove the pan from the heat and stir in the sour cream.

Potato Variation

Another variation is one that is especially great for those on a low-carb diet. You can use our recipe for Cauliflower and Turnip Mash in place of the mashed potatoes and then proceed accordingly with the ground beef and gravy portions. And the outcome will still be delicious.

Noodle Variation

Some people prefer to eliminate the potatoes completely and they serve the beef stroganoff on noodles instead. Egg noodles tend to be a favorite and are a popular choice for many people.

Tips and Recipe Notes for Mashed Potato Stroganoff

Beef

This recipe calls for the use of ground beef. However, you can change it out and use chicken or pork if you prefer. If this is the case, we recommend adding some beef bullion to maintain the strength of the beef flavor.

Mushrooms

You can use fresh white mushrooms (sliced or chopped) for this recipe. Or forgo the fresh mushrooms altogether and just use what is already included in the can of cream of mushroom soup.

Potatoes

Mashed potatoes are a favorite at our house, Cauliflower and Turnip Mash works well as a low carb option for the base as well as substituting the noodles for the potatoes.

Refrigeration

Mashed potato stroganoff keeps well in an airtight container in the refrigerator for up to 4 days.

Freezing

We don’t recommend freezing the mashed potatoes because they don’t necessarily freeze well. However, you can place the beef and stroganoff portion in an airtight container and freeze them for 2 months.

Reheating

Mashed potato stroganoff can be reheated by covering it with a napkin in the microwave for 1-2 minutes, or by placing it in a frying pan on the stovetop with a bit of oil. Heat it on medium heat on the stove top.

How to Make Mashed Potato Stroganoff

The great thing about mashed potato stroganoff is that it can be made in less than 30 minutes on the stovetop and it is a deliciously filling meal.

Ingredients

Mashed Potatoes
2 lbs Red Skinned Potatoes
4 oz Cream Cheese
8 oz Sour Cream
3 tbsp Butter
2 tbsp Milk

Stroganoff
1 lb Ground Beef
1 Onion, diced finely
Fresh Parsley, chopped
1 Can of Cream of Mushroom Soup

Instructions: How To Make Easy Mashed Potato Stroganoff With Beef

Wash potatoes well with cool water, removing any debris. Leave skins on and quarter and add to a pot of hot water over high heat prepared to boil. Cook until the potatoes are tender (about 15 minutes).

Meanwhile, in a large frying pan, add ground beef with a few drops of water, onion and mushrooms to sauté. Cook until the meat is browned. Drain any grease.

Add 1 can cream of mushroom soup to the meat mixture. Heat on low until warmed through.

Finish the mashed potatoes by removing them from the heat when they are tender. Drain water and transfer them to an electric mixer. Add cream cheese, sour cream, butter and milk. Beat until whipped.  

Serve mashed potatoes with stroganoff mixture on top. Garnish with chopped fresh parsley. Enjoy!
