How to Make Chocolate Chip Scones

Step-by-Step Instructions

Step 1: Preheat Oven

Preheat your oven to 375°F (190°C). 

Step 2: Make The Scone Dough

In a mixing bowl combine your dry ingredients. This includes granulated sugar, all-purpose flour, salt, and baking powder. 

Next, we highly recommend using a box grater to grate your frozen butter. If you do not have a greater you can simply cut the butter into fine pieces. Add your butter to your dry ingredients. 

Stir to combine or use a pastry cutter to mix together. Add heavy cream and vanilla. Gently fold the dough together until combined. You want to mix just until the dough begins to come together. Be careful to not overmix the dough. 

Step 3: Kneed To Form A Ball

Add your chocolate chips to your scone dough and gently knead them together until you form a ball with chocolate chips throughout.  

Step 4: Cutting into Scones

Divide your ball into two even balls. Gently pat it down and cut into approximately eight wedges for each ball of dough. Place your wedges evenly spaced on a lightly greased cookie sheet. 

Step 5: Brush

Before baking, take a bit of milk and brush the top of each scone with it. Sprinkle the top of your scone with granulated sugar or large sugar chunks. 

Step 6: Bake

Bake at 375°F for approximately 15 minutes, or until the bottom of your scones are light golden brown. 

Step 7: Cool

Allow the scones to cool before you add your toppings. 

Step 8: Glaze and Drizzle

In a small mixing bowl prepare your glaze and set it aside. In a microwave-safe bowl, melt your chocolate chips by microwaving for 30 seconds then stir, repeating until your chocolate chips are melted.

This typically takes between 1 minute and 1 minute 30 seconds. Add your glaze and chocolate drizzles on top of your scones, then serve and enjoy!

Why Brush Scones With Milk Or Cream. We enjoy brushing our scones with milk or cream, then sprinkle a pinch of sugar on top of each scone before it is baked. This provides a lovely finish to your scones and helps the top to brown slightly. 

Egg Wash for Scones. You may also choose to add an egg wash to your scones when they are in the final stages of baking. To add an egg wash, you can remove the scones from the oven, then mix one egg white with a little bit of water, then brush it over the top of the scone. Glaze. Adding an icing glaze to your scones is optional but is a very nice way to finish your scones off and add a bit of elegant flair to them as well.

Make them round or wedge-shaped. Scones are traditionally in a wedge or a triangle shape. To do this, we recommend patting your ball of dough flat, then using a pizza cutter and slicing your scones. 

Use cold ingredients. One of the keys to making the perfect chocolate chip scone recipe is to use cold ingredients. It is key that your ingredients be cold, and even use frozen butter for the best possible scones. 

Add the liquid gradually. When you add the liquid to your dry ingredients, pour it in slowly and mix so that your liquid is gradually added to your dough. 

Use a fresh baking powder. Make sure that the baking powder you are using is fresh, and not outdated. Using new baking powder will give you the best results for your scones. 

Serving. Ideally, you want to serve your scones after they have cooled. Although they can be served warm, the best flavors will be enjoyed after they have cooled to room temperature. 

Choosing Chocolate Chips. Choosing the best chocolate chips for your chocolate chip scone recipe can be entirely up to your preference. We prefer to use dark chocolate chips, or mini chocolate chips for our scone recipe, however, you can use whichever type of chocolate chips you like the best. 

The Key to Light and Flaky Scones. The key to light and flaky scones is to use cold ingredients, especially frozen butter if you are able, then shred the butter using a box grater. Finally, when you are making the dough, make sure it is not handled too much. Following these simple steps will give you the best light and flaky scones. 

Frozen Grated Butter. Using frozen grated butter is one of the simplest and best ways to make your scones turn out light and flaky. Simply freeze your sticks of butter ahead of time, then great your frozen butter with a box grater. Keep your butter frozen until you are ready to add it to your recipe.

How to Store Scones

Room Temperature. For best results, you can transfer your chocolate chip scones after they have been cooled to an air tight container, then store them at room temperature in a dry location for 2 to 3 days on the counter. 

Refrigerator. We do not recommend storing chocolate chip scones made with this recipe in the refrigerator. Scones that are stored in the refrigerator tend to become hard, and not taste as good. 

Freezing Instructions. Freeze chocolate chip scones both before they are baked, and after your scones have been baked. 

How to Freeze Scones

Freeze Before Baked – To freeze scones before they have been baked, prepare as instructed above, and cut to freeze scones before they have been baked, prepare as instructed above, and cut each scone into its shape.

Then, place your scones on parchment paper, and on a cookie sheet. Freeze for one hour, so they are solid, then transfer to an airtight container, or seal them in a plastic freezer bag and freeze for up to one month. 

Freeze After Baked – Chocolate chip scones can also be frozen after they have been baked. To do this allow your scones to cool to room temperature, then place them into the freezer on a cookie sheet for approximately one hour or until they are frozen solid.

Then transfer the chocolate chip scones to an airtight container, or seal them in a plastic freezer bag. Place them back into the freezer and freeze them for up to three months. 

Thawing Frozen Scones

To thaw frozen scones, remove them from the freezer and allow them to thaw overnight in the refrigerator for raw scone dough, or on the countertop for baked scones. 

Once thawed, you can bake scones as instructed above. You may also reheat baked scones in the microwave for 30 seconds at a time until warm, or in the oven at 350°F for approximately 10 minutes or until warmed through.
