Roasting the habanero pepper is entirely optional. If you have a gas stove and wish to roast it over the burner you can absolutely do this for a few minutes turning it occasionally with a pair of tongs. Or you can roast it in the oven by placing it on a baking sheet lined with parchment paper. This is a good way to help your habanero chi meld in flavor. Or you can simply leave the habanero peppers raw and add them to your salsa.
To make the salsa, you will first want to wash all of the fruits and vegetables you are adding into the salsa. Then peel and dice them on a cutting board as needed.
Combine in a large bowl combine your diced mangoes, diced tomatoes, diced onion, and fresh cilantro. Add in the remaining ingredients of lime juice and salt. Toss to combine.
Then wearing kitchen gloves, take your habanero peppers cut them open, and remove the seeds. Then diced the habanero pepper very fine. Add a very small amount of the habanero pepper to your salsa, then taste the salsa. Add more habanero pepper as desired until the salsa reaches your desired level of spice.
Make sure to thoroughly stir the habanero salsa thoroughly before serving. After all of the ingredients have been added to your mango habanero salsa, it is ready to serve and enjoy.
