A 1-pound piece of salmon that is approximately 1 inch thick you can count on it taking about 20 minutes to fully cook. Please be aware that this does not mean that 2 pounds of salmon will take 40 minutes and 3 pounds 60 minutes. When you are dealing with baking salmon at 350°F the amount of time it takes larger pieces to fully bake may vary, instead of 2 pounds taking 40 minutes it may take more like 30 minutes, but it all depends on the exact size of your salmon.
Internal Temperature
A good rule of thumb when baking salmon so that it is completely baked without it becoming hard and dry is to bake your salmon until it reaches the internal temperature of 137° to 140°F then remove it from your heat source so that it has a chance to rest. During the resting time, you will find that it continues making and will reach the internal temperature of 145°F. Now you can enjoy a fully cooked salmon without it becoming hard and dried out.
