First, preheat oven to 350°F.
Cut your zucchini into thin slices.
In your mixing bowl, combine all of the ingredients except for the zucchini slices. Mix until combined. Then fold in the zucchini slices.
Pour the mixture into a square 9-inch pan, or casserole dish. Spread the zucchini mixture evenly in the pan. Place it into the 350 degree oven and bake for approximately 30 to 40 minutes or until it turns a light golden brown.
Insert a toothpick into the center to see if it comes out. Once it is clean, remove it from the oven and allow it to cool for a few minutes before cutting and serving.
If your casserole needs to continue baking for a few more minutes, you can cover it with aluminum foil to prevent the top from burning.
Continue cooking until it is baked all the way through. Once your casserole is completely cooked, let it cool for a few minutes then cut it into pieces before serving.
